As an Austrian (from *the* capital of Spätzle, not that anyone asked), this is one of the better Schnitzel I've seen from over the pond, good job! You did well on the Spätzle too, completely without the traditional little grate we have for them. By the way, you can absolutely keep them warm in the oven for a while if you're preparing multiple portions to serve them at the same time. A small splash of Spätzle water keeps them from drying out. If you want your spaetzle nice and fluffy, use seltzer in place of water. My mother's cousin taught me that when I worked in her restaurant in Germany.

My moms birthday and mine are two days apart, so when I was growing up we would alternate years of who would go out to eat, since we couldn't afford both. I remember my mom would cook me whatever I wanted and for a few of those birthdays I would have her make schnitzel and spetzel as my birthday dinner because I loved hers so much. Oh, my goodness, it looks yummy. My best friend's mom was from Germany and she always made my favourite dish, Jaeger Schnitzel and spaetzle, when I spent the night. I thought the very best part of it was the Hunter, or mushroom, gravy - made with beef usually but chimkin is good, too.

One of my favorite meals. We usually had pork schnitzel but I like chicken as well. I learned how to make schnitzel and spaetzle from my Aunt Elsie from Germany. She had a special spaetzle making tool that was made of wood. It was so cool to watch the little bird shaped dumplings drop into the water. After they were fried to give them that crispy surface, I could eat a whole plate of them. My Aunt called me spaetzle girl because I loved them so much.
