Prawn Noodle Soup is a unique dish found in Singapore and Malaysia. It's consumed for breakfast, lunch and dinner here. The rich aroma of the broth, coupled with soft meat from the pork ribs and lightly blanced prawns, there's nothing more you can be asking for this bowl of noodles.
It's definitely not the easiest dish to prepare, but definitely not the hardest dish to make. If you have a guide then it's all set! The main thing here is the broth. The broth is the heart and soul of the dish. There are 2 ways to make it: The Pork Ribs and Prawn head broth or the chicken feet and prawn head broth (can be made halal or if you do not want to consume pork). For this recipe, I will be using the Pork Rib version, but both taste as good. If you don't have sufficient prawn heads, you can follow this recipe as well. For this recipe, you will need:
500g Fresh Prawns
250g Pork Ribs
3 Sugarcane (the kind for making dessert)
60g Dried Shrimps
10g White Peppercorns
20g Rock Sugar
8 Cloves of Garlic
Other ingredients:
Yellow "Cooked" Noodle
Kang Kong, Or Water Morning Glory
Bean Sprouts
Fish cakes
Instructions:
1. Add Blanched Ribs, Sugarcane, White Peppercorns and Garlic into boiling water.
2. Fry sliced shallots until crispy. Using some of the remaining shallot oils, fry minced garlic, prawn heads and shells and dried shrimp until fragrant and add into the stock.
3. Caramelise rock sugar and add into stock.
4. Season stock and let it simmer at low heat for 40 minutes.
5. 30 minutes later, blanch noodles and supplementary ingredients.
6. Arrange the noodles and ingredients nicely in a bowl.
7. Pick out ribs for plating, prawn heads, shells and sugarcane to be discarded.
8. Turn on high heat and blanch prawns in stock for 3 minutes. Do not overdo this.
9. Plate prawns and pour boiling soup over the noodles and ingredients.
10. Serve and drench in shallot oil.

My cooking career started as a young teenager and then opening my own restaurant at the age of 19. But while in college I became the International student President. There is where my cooking world in our dorm room at night all together. A new world opened up while cooking with my friends from other countries like Singapore Bangladesh Philippines Malaysia China India Japan and many other places. I learned a lot. It has helped me to cook for over 90 celebrities. Its refreshing to see your videos. New fan!

Just tried this. I didn’t manage to get the sugar cane but the caramelised sugars helped to augment the taste. I also added lean pork besides pork ribs to flavour the soup. I used black peppercorns instead and it worked too! Thanks for the wonderful broth!

Super love the HALAL Recipes! I jus tried and made today, I follow everything but I put some dried Shrimp and the soup is light in color, so I put a little dark soya sauce & instantly become darker! the taste is Awesome ya! My Malay hubby & my children all love it, yeah~~ thanks for sharing👍🏻👍🏻👍🏻

For Home use, a better way to have more aroma out of the prawn heads is to let them ferment for 3 hours or more.. For commercial use, its not possible so they tend to use as many prawn heads as possible. Farmed prawn heads do not give a good taste, only wild ones is very good. You did not keep the pork ribs wet so its all dried out. Dried part is not nice. In the future use full size pork ribs and soup pork bones to make the pork broth to combine.

Hi, I chance upon your video and really like it. I am from Singapore too but live in Toronto now. I have a great passion for cooking and recently just started a YT channel too. I like how professional your YT looks and feels, and of course all the yummy delicious food you cooked. They made me soooo hungry lol!!! There is so much to learn from you...where did you learn to cook so well? Also you inspired me to work harder on producing more videos. I dont know how you could produce 2 videos per week...that's soooo amazing lol! I am a beginner in video editing and is using iMovie to make my cooking video. Do you have any tips for me, would love to hear them, kum seah in advance!!!

I learnt the basics from my mother then set out learning the rest on my own! I learnt video editing by looking on tutorials on youtube whenever I have problems. Then learn slowly. It took my about 2 weeks to learn Adobe Premiere pro and start producing quick. Look up recipes and cook them once before filing them. For video editing I would say, try to learn all the time saving hacks, I don't know much about iMovie so I cant really say anything specific.

Love the recipe. This is one of my favorite food when I used to live in Singapore for 6 years that I had to have it at least once a week. I miss it so much and now I can try to do it by myself. Thanks for sharing !

After frying the shallot do you put the fries shallot into soup to cook for 40min?

Nope, I just use the oil. You can put some if you want as well but the oil should suffice

Looks very good. More like a Malaysian prawn mee, but needs a little bit extra - the sambal. I'd be interested to see a recipe of Singapore Prawn Mee / Rochor Mee if you have it
