A perfect dumpling has several characteristics:
【The Perfect Skin】
Doug making technique, length of time to boil, and type of filling all matter. Too little and it's under cooked and could be raw. Overcooked and the skin will be too soft and lack texture.
【The Perfect Filling Texture】
There is a lot of technique to make a filling that is bouncy in texture with clear delination of the separate ingredients. Without using technique, often the dumpling fillings come out mushy or watery.
【The Perfect Filling Taste】
There are many possible combinations of fillings. There are some rules that helps emphasize the taste and balance out the different flavors so that you can make any combination taste great.
