I just love the Italians when they have their street fairs and markets, - they sure know how to cook properly as opposed to the British, who I find seem to 'play' at cooking one or two items at a time and then 'Heavily Overcharge' for them. - Give me Italian cooked food any-day, - (not that I like all of it I'm afraid), - I don't,. - but at least it's always Hot, well presented, and you get a damn good portion.

should we be obsessive over cross contamination of how they use the same spatula/tongs/utensil to handle both raw and cooked meats, including half cooked ones where one side is cooked but the other still raw? DO they even care about that? I need to know if we're supposed to be concerned about that in a food service setting.
