Ingredients
2 tablespoons extra-virgin olive oil
1 tablespoon unsalted butter
1¼ cups coarsely chopped onion (about 6 ounces)
2 cups coarsely chopped cremini or portobello mushrooms
1 teaspoon herbes de Provence
2 cups any long grain rice
4 cups light chicken stock vegetable stock also works
½ teaspoon salt
¼ teaspoon freshly ground black pepper
18 stalks asparagus with firm tips
