Miss this dish. My mum used to buy some boneless chicken legs for me in the rainy days. I will certainly cook this if I can find the boneless chicken leggs here. Thanks for reminding my old days.
totally love this non-oil frying method! I used an instant pot for the last part to shorten the cooking time. Then reduce the sauce and thicken it to coat over the chicken feet. I find this video to have the best no oil fry recipe! Thanks for sharing!

my favorite...I live in a small town in the middle of the US w/o any restaurants serving this...but SO MUCH work...maybe I will try one day. Thanks for the video. I think I will probably steam them in the instant pot for 1 hr instead of cooking them in the pot.

The biggest problem is the processing time. 好麻煩 for a p;ound of feet. I finally decided to try it for the 1st time. These are my tips and comments: Restaurant make 10 or more pounds up to the ice water process. Then freeze the ones that will be used in coming days/weeks. I usuall prepare about three or more pounds at home, use about a pound and then freeze the rest. Whenever I feel like having chicken feet, I take some out from the freezer and it only takes an hour to finish the last cooking step. The result is about the same compared to the batch that wasn't frozen. Below are the strps to cut down on the processing time: The first step to boil for 5 minutes seems unnessary. The purpose probably is to get rid of the icy smell and taste. With all the spices amd seasoning added later on, it will all be covered. It is a personal perference. I skipped the 30 minutes of drying time. I put the feet in air fryer at low temp of 150F to dry for 10 minutes instead of air dry for 30 minutes. Then up the temperature to air fried at 400F for 8 to 10 minutes. I tried putting the feet in ice water for about 20 minutes, only the result is about the same.

When I prepared my 4 pounds of chicken, I used pressure cooker to cook for 10 to 12 minutes for the last step. Then put them in a big pot and finish them off on my stovetop. Now I can see and check to control the texture and make sure I am not overcooking them. I cooked 4 pounds in less than 3.5 hours after wahing and cutting off the toe nail using my streamlined processe from my earlier comments.

1975, I worked in a restaurent in Hong Kong. we used a big wok with lots of oil, the chicken feet were mixed with some dark soy source, then fried ( so skins were seperated from bones ) , after fried, cleaned, then steam in other metal pot with water, add slice gingers, green onions, 8 points herb ) steamed maybe 30 minutes... then took them out... chopped .. add black bean, garlic, salt, soy source, little corn starch.. oil....in a small dish... then steam again.... then serve to customer... de Miami, Florida

I cooked 4 pounds in presure cooker for 10 to 12 minutes. It is a precook because I don't want to overcook them. Then I transfer them in a big pot and cook them over the stove top. I monitor and cook untill I get the best result.
