16世紀に起源するといわれる。刀鍛冶の高度な制作技術が包丁に受け継がれ、江戸中期には専業者が株仲間を組織し、現在のような産地を形成した。火造り技法による刃物はその切れ味、使いやすさに定評がある。
In the late half of the 16th century,when tobacco was introduced, the demand for knives was on the increase for cutting tobacco leaves as the popularity of smoking grew. Knives fabricated in Sakai were highly praised for their sharpness, and sold well.

Interesting at 0:34 we see a pattern steel imbeded into the initial steel bar.. it has the saw tooth edge i believe to give the pattern in the steel and likely this is a higher carbon steel.. I have had the pleasure of visiting Japan a few times and i must say perfection and craftmanship are life.. From a simple thing like produce in a grocery store demand for excellance is top priority.. Visiting a temple and see a large Stone standing with the intricate carving of Kanji or Hiragana or Katakana in the stone proves the demand for excelance.. its not like you can just go grab another stone off the shelf... Your Videos are amazing and a inspiration to the world.. Japan is the center of excellance in handmade craftmanship...

Com toda certeza um trabalho fantástico majestoso memorável e também tenho que admitir que após décadas desejando algumas festas facas forjadas Taís como deba bocho de 19,5/21cm de lâmina e as guiton e as de sashimis de todos os tamanhos não conseguirei satisfazer este desejos pois a qualidade e inigualáveis e os precisa estão muito além do que poderia pagar porém deixo o meus parabéns a estes artesãos
