🟢材料:
雞腿 2 隻
薑 1 片
蔥 1 棵
紹興酒 1 湯匙
生抽 1 湯匙
老抽 1 湯匙
鹽 1/4 茶匙
糖 1 茶匙
胡椒粉 少許
玫瑰露酒 1/2 茶匙
冰糖 1 小塊
🟢步驟:
1️⃣ 雞腿洗淨並吸乾水分,略為切開(可不切)。加入薑、蔥、1 湯匙紹興酒、1 湯匙生抽、湯匙老抽、1/4 茶匙鹽、1 茶匙糖和少許胡椒粉,拌勻並醃製 2 小時。
2️⃣ 煮滾一鍋水,大火蒸雞腿 5 分鐘,然後轉中火蒸 5 分鐘。如果雞腿沒有切開,蒸的時間需要多加 2-3 分鐘。
3️⃣ 蒸雞的汁液加入 1/2 茶匙玫瑰露酒和 1 小塊冰糖,煮至濃稠並淋在雞肉上即可。
🟢Ingredients:
Chicken legs - 2 pieces
Ginger - 1 slice
Spring Onion - 1 stalk
Shaoxing wine - 1 tablespoon
Light soy sauce - 1 tablespoon
Dark soy sauce - 1 tablespoon
Salt - 1/4 teaspoon
Sugar - 1 teaspoon
White pepper powder - a pinch
Mei Kuei Lu wine - 1/2 teaspoon
Rock sugar - 1 small piece
🟢Cooking Directions:
1️⃣ Wash the chicken legs and pat them dry. Slightly cut open the chicken legs (optional) and add ginger, spring onion, 1 tablespoon Shaoxing wine, 1 tablespoon light soy sauce, 1 tablespoon dark soy sauce, 1/4 teaspoon salt, 1 teaspoon sugar, and a pinch of pepper. Mix well and marinate for 2 hours.
2️⃣ Bring a pot of water to boil. Steam the chicken legs on high heat for 5 minutes, then turn to medium heat and steam for another 5 minutes. If the chicken legs are not cut open, steam for an additional 2-3 minutes.
3️⃣ Add 1/2 teaspoon rose wine and 1 small piece of rock sugar to the steaming juice. Cook until thickened and pour over the chicken.
