🟢材料:
雞腿 2 隻
薑 1 片
蔥 1 棵
紹興酒 1 湯匙
生抽 1 湯匙
老抽 1 湯匙
鹽 1/4 茶匙
糖 1 茶匙
胡椒粉 少許
玫瑰露酒 1/2 茶匙
冰糖 1 小塊
🟢步驟:
1️⃣ 雞腿洗淨並吸乾水分,略為切開(可不切)。加入薑、蔥、1 湯匙紹興酒、1 湯匙生抽、湯匙老抽、1/4 茶匙鹽、1 茶匙糖和少許胡椒粉,拌勻並醃製 2 小時。
2️⃣ 煮滾一鍋水,大火蒸雞腿 5 分鐘,然後轉中火蒸 5 分鐘。如果雞腿沒有切開,蒸的時間需要多加 2-3 分鐘。
3️⃣ 蒸雞的汁液加入 1/2 茶匙玫瑰露酒和 1 小塊冰糖,煮至濃稠並淋在雞肉上即可。
🟢Ingredients:
Chicken legs - 2 pieces
Ginger - 1 slice
Spring Onion - 1 stalk
Shaoxing wine - 1 tablespoon
Light soy sauce - 1 tablespoon
Dark soy sauce - 1 tablespoon
Salt - 1/4 teaspoon
Sugar - 1 teaspoon
White pepper powder - a pinch
Mei Kuei Lu wine - 1/2 teaspoon
Rock sugar - 1 small piece
🟢Cooking Directions:
1️⃣ Wash the chicken legs and pat them dry. Slightly cut open the chicken legs (optional) and add ginger, spring onion, 1 tablespoon Shaoxing wine, 1 tablespoon light soy sauce, 1 tablespoon dark soy sauce, 1/4 teaspoon salt, 1 teaspoon sugar, and a pinch of pepper. Mix well and marinate for 2 hours.
2️⃣ Bring a pot of water to boil. Steam the chicken legs on high heat for 5 minutes, then turn to medium heat and steam for another 5 minutes. If the chicken legs are not cut open, steam for an additional 2-3 minutes.
3️⃣ Add 1/2 teaspoon rose wine and 1 small piece of rock sugar to the steaming juice. Cook until thickened and pour over the chicken.

鼓油雞肶的做法很清楚明白,顏色也那麼吸引人! 相信小孩子最喜歡這樣去了骨的雞肉! 謝謝主持! 另也要讚視頻的伴奏音樂,是那樣難得的沒有“喧賓奪主“! 而是細聲地悠悠然地,並沒掩蓋了主持人的講話聲音! 且音樂本身就很好聽。 這樣重要的事,許多許多視頻卻都忽略了! 常常是音樂伴奏聲大過主持人講話聲。與視頻的目的完完全全“背道而馳“。 而且看趨勢是個個樂此不疲地繼續下去。 在我們旁觀者看來,真是很莫名其妙。我們屢屢投訴也無用。 另外,也覺得那抹茶卷廣告的歌曲本身, 及歌者的平和悠閒的聲音都很好聽。 難得能令我們聽眾心甘情願地聽完!

但很奇怪,為了想再聽一次那首廣告歌,就再點一次本視頻, 可是那首廣告歌卻沒有了!好像是日文歌。 記得那好像是抹茶卷之類的吧?真可惜!要找卻找不到了。 想來是不同的廣告輪流着放吧。 好聽的歌曲旋律,好聽的聲音,悅目的顏色,平和地表演着... 就是會令人記憶起那個廣告,甚至去買一次試試看。 那,目的已達。 又何需大聲疾呼,何需重複又重複地呼喚...

Well done 👍👏! This is a simple and delicious dish. I like the fact that you removed the bones before plating the chicken pieces. The bones can be used to make soup so that nothing goes to waste. I also enjoy the background music in your videos. It is very soothing. Please make "Portuguese chicken" (葡國雞) some time! I have watched other videos for that classic dish, but would like to see how *you* would make it. Take care! 🇺🇸

I really wish I can cook the Portuguese chicken, but covid-19 is very serious in Hong Kong now. I can't go out to buy some ingredients which Portuguese chicken must use, e.g. Portuguese sausage, hm...... maybe ... later..... but not a promise because I've something busy in hand 😂😂🤣

@@oe_cook Sorry, I did not know about the present COVID-19 situation in Hong Kong. Please always stay healthy first! Despite its name, "Portuguese chicken" originated in Macau and does not exist in Portuguese cuisine. The dish does NOT require/contain any Portuguese sausage at all. It is basically chicken pieces simmered slowly in a "Portuguese sauce" ( en.wikipedia.org/wiki/Portuguese_sauce ) -- flavored with curry and thickened with coconut milk. The main ingredients are chicken, onions, potatoes, (mild) curry powder, turmeric powder, and coconut milk. Here is one Hong Kong cook's interpretation of the dish: kzfaq.info/get/bejne/lbaEfsd3l7Cpno0.html. Note that she also added carrots and celery. I would definitely NOT add celery, and perhaps not even carrots, but (optionally) white button mushrooms instead. Here is yet another Hong Kong cook's interpretation of "Portuguese sauce": kzfaq.info/get/bejne/h9upic6mxLi-pXk.html (see ingredients in video description). For your information, Lee Kum Kee (李錦記) sells a "Coconut Flavored Curry Sauce", which they call 葡國雞汁 in Chinese ( usa.lkk.com/en/products/coconut-flavored-curry-sauce ). I do not like its taste or its ingredients. It contains only turmeric, but no curry. It also uses coconut powder instead of real coconut milk.

The Hongkong cook's seems excess turmeric powder it may be caused to bitter taste. My Portugal friend had told me that Portuguese chicken is not a Portuguese food, it is Macau cuisine created by Portuguese who living in Macau, BUT the Macau Portuguese will add in the Portuguese sausage in this dish, they said that it is not a perfect Portuguese chicken without Portuguese sausage. The onions & potatoes are the main vegetables in this dish, most of them omit the carrot & celery.

@@oe_cook It appears that your Portuguese friend is trying to make the dish more continental-Portuguese by adding sausage 😊. Some years ago, I visited Macau and had the dish at a nice hotel. It did not contain any sausage. If you ask seasoned Hong Kong chefs who are familiar with the dish, they will also tell you that it does not use any sausage. In my opinion, the addition of Portuguese sausage -- either _linguiça_ ( en.wikipedia.org/wiki/Lingui%C3%A7a ) or _chouriço_ ( en.wikipedia.org/wiki/Chorizo#Portugal ) -- would spoil the delicate flavor profile of the mild yellow-curry-and-coconut-milk sauce.

Si les cuisses de poulet sont d'abord désossées puis cuites à la vapeur, le poulet rétrécira après la cuisson à la vapeur, et il n'aura pas l'air bien dans l'assiette, merci!❤️🌹🌹

I had swiped some sauce which left on the dish before chopping, and the sauce will be more adhesive after thickened by pan, that why the color looks darker. Thanks for watching!
