When you say large corporation u should also think that the amount of people stealing from a large organization will be more and there will be less people stealing from a small corporation. you can adapt that. if you dont find exactly same crime in sunnah and Quran then lawmakers/prosecutors are free to use their intellect. so yeah only small number of high-profile crimes (death penalty for intended manslaughter, hand chopping for very big theft (like bank robbery etc)) wouldnt be changed but things related to everyday life can be changed and adapted using revelation and intellect and local sources. you can find many examples of such ruling even in the beginning of muslim rule. many courts had to come up with rulings based on mixing of local law of governed people and quranic teaching of general law to find solutions for problems.

While it is possible to prove if someone is guilty the punishment is irreversible even if the accused learns their lesson they will never be able to move past their mistake.
