You can spend even your whole life to discover the food in China and many of them may not heard of still. China is so big and have so many diffrent geography and climate, and so many people, that lead every city has her own special food.

Love the video Amy!! and Mengzai's mom is super knowledgable and nice too! I had so much fun watching the food adventure as well as Beijing's history as well~ Perhaps food adventure with local (senior) citizens could be a new theme? I mean you always have such good vibe and connection with not only just the young people but also senior ones--it gives us a different view on the food/culture from their perspective and it always brings out new insights that we just don't otherwise get to see. Just a thought. I'm so jealous you gotta try food and eat like an emperor!! Derk is falling behind in terms of royal hierarchy now LOL

It is so interesting to me that shaomai is actually written as 烧麦; in Hong Kong/Cantonese-speaking areas, it is usually written as 燒賣(烧卖). Many thanks to Mengzai's mom for sharing her knowledge in this video - everything looked delicious!

Yes...Actually there is also another one called 稍梅. Even with same pronunciation, there are at least 4 main categories of shaomai in China.

As a Cantonese man I find 'Siu Mai' sounds most appropriate. 'Siomai', 'Shumai'... what's the relevance?

Siomai is the Hokkien name. Shumai is the generic name used by westerners, but it's also called shumai in Japanese.

First time ever seen shaomai that looks like that. And the filling is different too. It pays to have an older generation with plenty of experience guiding you where ever you go. And you get to learn about the history too.

Although being offered to the emperor, these cuisines from various places have been modified to suit his taste, and subsequently the taste of people in Beijing. They are not usually not the original nor the best. And honestly, our food these days are much better than those eaten by the emperors in the past

I watched the Cdrama Royal Feast this year and the food served to the emperor and the royal family are exquisite with a lot of attention to detail and styling. I can imagine that shaomai being prepared in the royal kitchen. That sure is a beauty. I would recommend the drama for the food they prepared. I read they did a lot of research and took recipes from the royal cookbook and literally recreated them for the show.

You should come to my hometown, Huhehaote, to try the original Shaomai! We're proud to be the city that it is from! The original is just lamb with ginger and scallion filling and it's absolutely delicious!

Seriously... You WON'T want to eat like Chinese Emperor in historical manner... Except for some dynasty that have lesser controlling code on Emperor's manner... 1. You only allowed a maximin of 3 bites per dish. (Safety reason and enforced self-control) - mentioned in the clip. 2. You are not allowed your favor dish more than once every several months. (Safety reason) - partially mentioned in the clip. 3. Your food will mostly be warm or cold because they all have to pass safety taster before been bought to your table. 4. Someone else will eat your dishes before you do. (Yes, I'm talking about the royal safety taster) 5. You have to keep a most formal manner even when you are dining by yourself. 6. You are not allowed to eat with your family on the same table, they have to sit on different tables, and if you ask the servant to bring any dishes to them, they have to stand up and thank you with the outmost formal way to present their gratitude... This truly sucks! 7. When you eat, there will be an entire army of servant staring at you and watch your every movement. 8. Even when you know those corrupted chiefs are over charging your coffer for the food, you can't do much about it... Yes, the Emperor have to pay for his meal from the coffer... 9. You are not allowed any dishes you want, all dishes have to be planned and be cookable by the royal chiefs, and Emperor won't allowed to bring in his favor chief as well, those story about a local chief be summoned to serve the emperor are all just STORIES.

You should try Wan Dou Huang with Sichuan pepper oil, chilly oil, soya sauce, coriander, a little vinegar, a totally different TASTE from the Sweet Wan Dou Huang, I think you will appreciate this version of Wan Dou Huang .
