So are they’re any Canon of Creation exclusive demons, or are they all in the same Canon storyline regardless? For example, Amon and Khonsu Ra from the Khonsu side quests. Can you also get them in the Canon of Vengeance? And can you get both Night Lilith AND Qadištu Lilith in the same game in New Game +?

People say you need to beat Godborn mode but this wasn't the case for me. For me I beat Shiva on a playthrough (or maybe it's triggering the true neutral ending on a playthrough?), then when you go into the boss fight with Lucifer (go into a route with him as the final boss) it gives the option to fight him "at normal power" or "envision an extremely powerful being". Choose the more powerful option, beat him and beat the game, then on the next playthrough he'll be unlocked.

Definitely, do you see any demons that are greyed out? You can see their level and the greyed out image sometimes but depending on which one you missed it might not appear. You need to do all the quests where you unlock demons. Use this list, aqiu384.github.io/megaten-fusion-tool/smt5v/demons it has a few names that don't exist but it should help you.
