These cookies are too good! They taste like winter! Made with clementines and almonds, these Sicilian biscuits are gluten-free and very quick to prepare. Traditionally, these cookies are lemon and double the sugar. Here I created this recipe with clementine and reducing the sugar by half. The result and even better! They are crispy on the outside and soft on the inside, so soft it melts in your mouth! The best clementine/tangerine cookies. To eat with a good tea or for breakfast. This recipe makes about 15 servings. Ps: when I write without flour (it's because I don't use almond flour but powdered almonds - the flour is much finer). Good tasting !

Ingredients :
250 g (2 cups + ½ cup + 3 tbsp) powdered almonds (if necessary add 60 g (1/2 cup + 1 tablespoon)
120 g (¾ cup + 1 tbsp) icing sugar, sifted
1 teaspoon baking powder
2 clementines or tangerine
1 tablespoon of maple syrup
1 pinch of salt
2 egg whites
Optional: some orange food coloring
