Hey guys :)
I hope you're all having a great day so far....here's a quick and easy recipe for Scottish oatcakes! These are lovely with a bowl of hot cream of tomato soup...simply top the oatcakes with a wee bit of butter and the cheese of your choice :) They are also really nice with a sweet topping such as honey. I've listed everything I used down below if you wanted to make them for yourself. Thanks for stopping by guys, and until I see you next...take care x
______________________________________________________________________________________
I used:
40ml (3 Tablespoons) Water
1 Teaspoon of salt
115g (1/2 cup) Oatmeal (you could use rolled/porridge oats if you like..for a rougher oatcake)
55g (1/2 cup) Plain/all purpose flour
45g (0.20 cup or 3 Tablespoons) Unsalted butter
1 Teaspoon baking powder

i NEVER chuck left over dough into the bin. I made a wee one, just for me, privilege of the cook. I'm Scottish but live in France so you can't find store bought oatcakes, but as you say, they're so easy to make. I eat mine preferably with cheese and add a nice topping of Branston pickle - homemade by the way - heaven!! So oatcakes are made, after a cuppa, getting down to making shortbread, another Scottish treat that'll be on the table at Christmas. Merry Christmas everyone and a Happy New year to all. A big thanks to Cheryl for giving us such great recipes.

I'm in Chicago. Long story short from the Henderson's of Glasgow, St Clair is everyone's middle name. Made the rounds there in 1969. Wonderful memories. You are wonderfully delightful to listen to and the oatcakes taste like the things that make memories. Thank you.

I never usually leave comments but after trying several different recipes for oat cakes, this recipe is by far and way the best I have come across. I have been trying unsuccessfully to replicate my favourite commercial brand for smooth oatcakes and this recipe not only comes very close but the oatcakes taste so much better. I suppose purists wouldn’t add flour to the mix but I think it adds so much to the texture. I didn’t have enough butter so used the equivalent in rapeseed oil. The flavour was excellent. Thank you from a grateful Scot.

Great video, apart from throwing away good dough! Just roll into a ball then roll it and bake. You get an extra, albeit, maybe mis-shapen, oatcake! Just eat that one with your eyes closed! 🧀😋

So wonderful! I can't have plain flour so I used finely ground almond flour. Kept everything the same and used a smaller cutter (didn't have a 6mm one), turned out devine! Topped them with cheddar, poached egg, tomato, avocado and onion, salt and pepper with a thin slice of ham. My husband was so excited! We both just loved it. Thank you!

Thank you for posting this. I tried your recipe last week and have been enjoying eating the oatcakes, especially with butter and honey as a snack. They are great with soup like you said. They have a good texture although a bit dry. They don’t have much flavor eaten plain. I tend to experiment and modify almost every recipe. In the batch I made today I substituted a gluten free flour blend that I grind myself. I mix different grains together to make things more nutritious. Today I used a blend of Garbanzo bean, millet, flaxseed, sunflower seed and buckwheat flours. Due to adding too much water, I ended up adding a bit of regular flour to get them to the right consistency to roll out. This batch turned out very flavorful. Delicious 😋

Hello from Seattle in the USA. I was so happy to discover your channel a few days ago. My nana, who emigrated from Aberdeen to Vancouver Canada immediately following WWI, always had fresh oatcakes on hand and I loved them. She made many delicious, simple meals and treats. Buying Scottish oatmeal here in the States used to be difficult, but it’s much simpler now, what with the Internet! Thank you for sharing your recipes, stories, kitty, and humor. Happy new year!

Whenever I drove to Scotland on business, I always tried to bring some oatcakes and other stuff back to England. One time I had haggis and various pies etc. in the back of the car and was stopped by the police just north of the border, allegedly they were looking for someone but I think they were bored! When I opened the boot and he saw the bags of goodies going south and I told him why, he made some joke about an export licence! Turns out he was a bit of a foodie and at least he had a sense of humour! The both got back in their car laughing! I love your channel and will steadily work through all of your recipes. Good wholesome stuff!

I am of Scottish descent, so I have often wondered what my ancestors ate. I am also a pretty good cook and baker. I can’t find a lot of specialty flour at my local grocery stores. I also beat up my breads in my stand mixer. You recipebreminds me of how I make buttermilk biscuits. When I made biscuits the scraps left over were made into a biscuit for our dog. She loved her biscuit, even though it was often misshaped and missing a round shape..

I'm going to try this. I've been looking for a nice recipe to use oats. Edit: I just made them and they turned out great. I used coarse oatmeal and oat flour instead of the all purpose and that works fine too. But I'm a lazy person, so I rolled out the dough in a rectangle inside a folded piece of baking parchment and then cut the dough in 10 equal sized pieces. Worked wonderfully as well. They give a nice bit of energy. Good for in-between meals as well when you need something. Good healthy alternative!
