This recipe is very special to me because it was given to me by my grandmother. I tweaked it and tested out the batter many times to perfect it. Different combinations and portions of flours & starches.. it took a while but I was able to come up with the best tasting jeon ever.
My favorite part of any type of Korean pancake is definitely the crispy parts. So, i thought - why can't the whole pancake be crispy? I figured it out. YOU WILL NEVER GO BACK TO ANY OTHER JEON RECIPE AFTER THIS. I can guarantee this is the CRISPIEST most FLAVORFUL, literally the best korean pancake recipe EVER. Trust :) and... YOU'RE WELCOME!!
KIMCHI VEGETABLE JEON
1 cup all-purpose flour
1/2 cup Asian rice flour
¼ cup corn starch
1T Kosher salt
2 tablespoons sesame oil
8 ounces ground pork, or any ground meat or seafood (if vegan you can try impossible meat but you definitely need it for flavor and texture)
6 shiitake mushrooms, thinly sliced
1 small zucchini, cut into half-moons
1 cup kimchi, sliced thin
2 cups garlic chives or scallions, cut into 2-inch pieces
1 medium carrot, cut into 1/8-inch matchsticks
1 red finger chile pepper, thinly sliced
1 shallot, thinly sliced
Dipping sauce
1/4 cup soy sauce
1 tablespoon gochugaru (Korean red chile pepper flakes)
1 tablespoon rice vinegar
1 teaspoon sesame seeds
2 scallions, chopped
1 clove garlic, minced
1. Combine AP flour, rice flour, cornstarch, salt, and sesame oil in a large bowl and whisk with about ½ cup of water until the batter is loose but thick enough. Should coat and run off your finger.
2. Add the ground pork and whisk into the batter. Let it melt into it and become a part of batter.
3. Add your vegetables and mix well. It should seem like there is too much vegetables to your batter mix, just slightly coated.
4. On medium heat, add a good amount of oil in a nonstick skillet. Add about a cup of the batter and spread it so it’s about ½ inch thick. Let it cook on medium heat for about 4-5 minutes before flipping. If your heat is too high, the ends will burn and the pancake will not be crispy all over. Also, if you try to flip too early, the batter will break. Heat control and patience is key to an overall evenly crispy pancake.
5. When ready to flip, the pancake should be held together and the color should be even all around. Flip and let the other side cook and get crispy.
6. Drain on a paper towel.
7. Mix the dipping sauce ingredients and enjoy!

I read and watched dozens of Kimchi Pancake recipes looking for one that would be delicious *and* crispy. I knew, once I stumbled across yours, that I'd struck gold. While I didn't follow the recipe exactly, I stuck to the most important part -- the dry ingredient ratio of 1 part AP flour:1/2 part rice flour:1/4 part cornstarch. I cannot express how satisfied I was with how my jeon turned out. It was super tasty and maintained its crispness even after it had cooled completely. Thank you so much for sharing! Now, I have to look through your other recipes. 😅

WOW WOW WOW! I just made this today!! I made it last weekend with a different recipe and it was a sad pancake. LOL. However, I made it YOUR way this morning. Stunning! I noted that in your recipe above you don't mention how much water to use. I used 1 cup of water, but half of that was the brine and I filled the measuring cup the rest of the way to 1 cup. Then it was pretty thick so I poured in some more brine. My kimchi came in a mason jar. The pork is such an amazing secret ingredient!!! Thank you for sharing your grandmother's traditional recipe! Well done!

After eating two servings of kimchijeon today, I STILL want to go to the kitchen and make your recipe. I only went 2-3 minutes per side, and I didn't measure it out, except with a tablespoon to make smaller pancakes. I wanted some crunch, and found your recipe. This one will be next on my list to do!!

holy shiet. This looks so good. This reminds me more of japanese kakiage than it does kimchijeon....but tbh it looks better than normal kimchijeon.

possibly.. i havent tried it because i always end up eating it all :P I have kept the batter in the fridge for up to 2 days and it worked just as good so i don't see why not. The only thing is that it may change the texture of the vegetables... let me know if you do end up trying it - it'll be good to know!

After watching /discovering you with Nigel Ng.... I love Jeon...Love the "Chive" and kimchee ....So Good! I have A Massive Korean chive planter (4ft x 5ft} in my patio! I actually have a jeon video on my "channel" Don't Look!!! You rock! I love cooking and Am close to retirement.... Going to follow a dream to cook for charity when I do!

Cake flour is best for this because it's lower in gluten.

a good nonstick pan will be your best bet.

1/2 cup of water seems way off, and the sesame oil goes into the sauce not batter (based on video)

The "secret" seems to be to use a lot (like one cup) of cooking oil in a fairly small (10"?) pan. This is shallow frying rather than pan frying due to the amount of oil imo. Great tips nonetheless! Have you considered resting the batter in the fridge for a few hours or overnight like for okonomiyaki? I heard that helps it crisp up more.

You can just add ice water to your batter and it'll be crisper.
