My mother in law made these but cut slices into them & filled them with beans & cheese rather than adding it to the dough along with whatever she had leftover like you did. She passed away recently and I miss her so so very much! When my own mum died she came to fill the void left & while we had always been close that's when we became nearly inseparable. One of my most favorite ever people on the face of this earth. That woman could cook like crazy & make a feast from an assortment of scraps. I love Gorditas!

It seems a gordita is really an extra thick tortilla. Boy do those look good.

I prefer chorizo with beans. My mom used to make it when we were out of other items. In a tortilla or course.

Papas and chorizo in a flour tortilla is how they do it in Sonora.

Just a suggestion. Chorizo has a ton of grease in it. You can omit the extra oil and partially cook it first to release the grease in it to cook the potatoes. Cooks exactly the same. :)

You should try kiolbassa chorizo it’s a little pricey but worth it you get a lot more meat than fat. They sell it at heb by all the chorizo.

Girl let me start by saying Thank You, I stumbled across your channel and I’m so glad I did. I made this last night and my family loved it. Now I’m in California & my parents are from Texas. My husband from Mexico. My Mom past a few years ago. She taught me a lot. She was a great cook. I never made this before so I thought I’d give it a try. I was making Pupusas so I thought this would be great too. Well my 90 yr old Dad loved them ! He said it reminded him of his Mom & my Mom’s cooking. Huge compliment from him. My husband loved them too. He said it reminded him of home. I was floored because they’re pretty picky. I will be making these again. The rest of the Familia were like so when are you making those again? Lol I think we have a new favorite comida.
