I made this today with a regular pot, used home grown tomatoes, eggplant, carrots and baby bok choy. Added some bacon instead of the other meat I didn’t have. Came out wonderful! Especially great with sesame oil on top in the end. Thank you so much! This will be a regular thing in my house now.

I made this a few weeks ago and it was delicious! I used corn, button mushrooms, store-bought Chinese dried sausage, chicken, and edamame. Finished it off with a little sesame and chili oil.

I do similar dishes to this. My family comes from the rice region in Spain and for the starter we usually make a sofrito (onion, garlic peppers, sometimes wine) instead but the basis is very similar. I really recomend using round grain rice, specially bomba variety 8or even Calasparra rice) because it really soaks the flavor of whatever you cook with it. Most people here would add paprika and /or saffron wich are the typical rice spices in Spain, but when I do it for myself I usually just add herbs and maybe some chile flakes. Or ñoras (a smoked dried pepper).

Pressure cookers always look pretty neat when other people use them but in my experiences so far they take a lot of trial and error to learn how to make the most of. I'm not saying that they are bad, just be aware that getting the hang of them can be trickier than you might first think. I suspect that they make the most sense for people who have high energy costs. If so that is a good reason to learn them.

@Lisa ... Instant Pot is a great investment. We bought one few years back, then we bought two more. Because you can cook in one, while you prep for next cook in other.

Without the beef or homemade sausage it's just "Wash rice, put everything in a pot, turn on". Lazier than this isn't cooking...it's toast, or reheating something in the microwave.

i love this channel, i don't have an instant pot, i tend to use pressure cookers or stainless steel pots but i'm very grateful that you give us alternatives if we don't have the equipment.

There is a very similar indian dish called Bisi Bele Hulianna (or Bisi Bele Bath - aka hot lentil and rice), which is the traditional indian version of this dish. Its also delicious and super easy! The main differences seem to be the specific spices used in the mix, and of course the addition of lentils.

I’ve been making this for a long time. I had no idea it was an actual recipe. I do add a little less water to make up for the fact that a tomato has a lot of water.

About a month ago, I purchased one of those Instant Pots, and have never used it. So I tried your recipe in it and it works perfectly! It's exactly the same model as the one you have! Nice recipe...thank you.

Great presentation of your recipe. The bottom is not burned it is “fond” a common chef word for the cooking process especially with meats. Gave a like will watch for more of your videos despite being a home cook that doesn’t use appliances just pots and pans etc. ps the sausage you made looks excellent.

Im Mexican and I find this recipe similar to Red Mexican Rice recipe, we first fry the clean and washed rice til is dry and just a little golden, add some broth whit blended tomatoes , then add some vegetables and finally let the exces of water get consumed covering the pot whit the lid, the result, a savory delicious and fluffy rice whit vegetables to eat whit another dish.

This looks like a great idea. However, I wouldn't want to mess with the tomato skin. I'd be inclined to used canned stewed tomatoes or something similar. In the past I've had trouble finding dark soy sauce locally, so I usually substitute regular soy sauce with some added molasses. But whatever changes I'd be inclined to make, this looks like a versatile enough recipe that I could get away with it. Like a stir fry that's ultimately more stir than fry.

I'm a SUPERFAN, and I'm a "Mandy" too! Alot of my Saudi friends do a one pot rice dish similar, but with Chicken, it called "Kesbah", not sure about spelling, but it is delicious, and the bone and skin on the chicken gives so much flavor to the dish, along with the cinnamon sticks, clove, garlic, ginger, bay leaf, etc. Anyways, I love how user friendly your recipies are ...can be added to or changed for an up scale or a simple dinner. Thank you!

I just made this! It was soooo delicious! I threw in lions mane mushroom (used Mandy’s marinade on them), snap peas, corn, carrots, & peas, & meizhou dongpo Chinese sausage. Mandy do you know of a vegan recipe for the Chinese sausage?

This looks delicious! Just 2 questions; how many minutes is your rice setting? And after how many minutes do you do a pressure release?

Yeah this is something I'm questioning as well. Usually with rice it's best to let the pot depressurize on its own as opposed to quick releasing it. This implies that she just has it on for 10 minutes and does the quick release, so I'm not sure either.

I'm so glad you put Amazon links to the soya sauces! In Canada we only have one name for all soya sauces, and there's no way to specifically get a certain kind unless you speak a language other than English. It makes it very hard to know just how your sauce will taste if you don't buy it and test it yourself, and you can wind up with a lot of salt, dark sauces that all taste similar in your cupboard if that's what you do.

Caramelization only happens above 230 F. Water boils at 212 F. Therefore, what you are doing to the sauces is not caramelization but reducing (ie boiling off water), which thickens the sauce and concentrates flavour.
