Blueberry Cinnamon Coffee Cake Recipe
1/2 c butter
1 c sugar
2 eggs
1 c sour cream
2 c flour
1/2 tsp baking soda
1 1/2 tsp baking powder
1 tsp vanilla
1 c Blueberries
Topping:
1/2 c chopped nuts (Walnuts or Pecans)
2 tbsp sugar
1 tsp cinnamon
Preheat oven to 350°F/176°C
Grease a 9 in tube pan
Combine butter and sugar in a large bowl. Mix until light and fluffy. Add eggs, one at a time, mix well after each egg. Add sour cream and mix well.
Sift flour, baking soda and baking powder together. Then add to cream mixture and mix well. Add vanilla. Fold in blueberries. Pour 1/2 the batter into pan.
Make topping recipe from above. Sprinkle 1/2 the mixture over batter. Then add remaining batter and top with remaining topping mixture.
Bake 50 mins or until toothpick comes out clean.
