Hello and a big warm welcome to my channel 👋🏼
If you are new here then my name is Claire and I am a busy mum of 2 boys currently folllowing the slimming world plan it’s in and off as these things are and I hope to give a very real account of my slimming world journey.
In this vlog I am cooking some recipes from the Slimming world cook book taste the sunshine ☀️

I love the taste of sunshine book some reallly nice summer recipies in there. I love the Huli Chicken. The turkey meatballs are nice too but i used a tomato based sauce rather than the pesto one :)

Yes I defo looked at the huli chicken I’ll have to try that next time as a few people have mentioned that , my boys love meatballs so they are always a meal that works well here 🙌🏼

My mint all died 🤣 it grows really well tho doesn’t it so think I’m just gonna plant some 🙌🏼 love mint in new potatoes 🥔 My favourite place for it is still in a mojito tho 🤫

Thank you Claire the recipes look delicious! I freeze my mint by putting mint in ice cube tray cover with water then freeze! I add it to whatever recipe that calls for mint. I did try drying it but I wasn’t happy with the result! x

Freezing is a great idea , I had ordered the potted mint but they sent me that huge bunch 😂

I made the Huli Huli chicken which was really good and the herby yoghurt curry which was a lot like thai green curry and also really nice. X

The herby chicken curry was on my list but I think it got swapped out when I went one meat one fish and one veg so I’ll defo be trying that 🙌🏼 have a great week Cx

Freeze the mint leaves then just crumble into recipes where needed xx

Thanks for the veggie options! It does put me off buying the books knowing that 3/4 of the recipes aren't suitable for me.

Hi Rebecca thanks so much mmmmm no I can’t think if any specific recipes my go to for sp meal would be salmon or chicken stir fry with loads of veg and no noodles 🙌🏼 swapping spaghetti for courgetti , rice for cauliflower rice can also help turn your meal to speed 👌🏼

You are such a good cook, Claire, love the recipes. Unfortunately my husband hates yoghurt and I love it! So many SW recipes contain yoghurt, it’s a nightmare! Sometimes he ends up with mayo instead. I have loads of herbs in my garden. Your mass of mint made me laugh. Oh and I would have to use chicken mince instead of turkey because his lordship hates that too. I do try!

Hey Mary yes I suppose the fat free yoghurt just makes a very handy dip at least it’s easy enough to make a small amount for yourself have you tried quark instead he may like that !!! I think the chicken mince or even a beef mince version would work perfectly well 🙌🏼 maybe you can come plant my herb garden 🪴 you know I’ll never get around to it 😉😂 Have a week Cx

Have you tried the sw kitchen? I've ordered twice. It's amazing. I only order for me which means left overs I freeze for the next week or have as lunch
