SLOW SMOKED LAMB SHOULDER || Pulled Lamb cooked in the UDS.

This is an easy how to slow smoke a lamb shoulder using my very own Suck Knuckle Smokers Lamb Rub but use what you like, the black vinegar mop is the perfect addition as the vinegar helps cut thru the fatty richness of lamb fat.
(*Times stated in the video are for reference purposes only, always cook by tempature and feel)
BLACK VINEGAR MOP SAUCE
Makes. 3 cups
Takes. 25 minutes.
Ingredients
2 cups water
1/2 cup Lea & Perrins Worcestershire
1/2 cup apple cider vinegar
1/2 teaspoon white pepper
7 tablespoons brown sugar
1/4 teaspoon allspice
1/4 teaspoon onion powder
1/4 teaspoon garlic powder
1/4 teaspoon sks lamb rub (optional)
1 tablespoon kosher salt
1 1/4 teaspoons fresh lemon juice
Method
Mix all the ingredients in a pot and simmer for 10 minutes. Because it has a high acid content, it can keep for months in the refrigerator.

Wow! I made this yesterday after being inspired by your video. Mine was ready in 6.5 hrs. Weber was a bit hot. 300-320°F So not as tender as yours. But it was DAMN good! We particularly liked the spritz, smooth and spicy. Will definitely do it again. Thanks

You can cook leg to pull, but it's no where near as good as shoulder!

Masterful. Smoked to be able to hand pull. That was beautiful. Looked wonderfully juice, extremely tender. Had great looking bark and you could see the smoke permeation. Are you manually refilling your charcoal bowl for 8+ hours? What's your preferred type of smoking wood? Chips, pellets, chunk ? (I've been at it a few years now, but have much to learn) I use a cheap, modified Brinkmann Smoke'n'Grill, so it's all manual for me. Any tips? (I'm in for 8 hours of manual fire maintenance....teach me your ways!)

With a ugly drum smoker you can get 15+hr burns from one basket so no need to refill it. If you use the minion method in your cooker you might get close but would probably just throw a little more fuel in just to be sure. I prefer to use a few fist size chunks of wood, anything would work good but i preference fruit and nut wood. Almond wood is my fave for lamb, mainly because it smells nice and nutty while cooking. I am Kinda new to this sort of bbqing and have never smoked any meat before. I am wondering how do you let the charcoals burn for so long? I am guessing I'll have to keep putting in more charcoal to maintain the heat?

Hi there, great video, i have done this recipe on my water smoker and the results were out of this world. I have noticed that you are not using water in the drum smoker. Is that correct? Do you think that water helps with smoking? Thanks

Thanks glad it worked out for you. I dont ever use water pans in the drum as its a great cooker without and i just use a diffuser pan. Other cookers like offsets and bullet style smokers can benefit from a little water to help stabilize temps and add a moister cooking environment. Definitely dont need it tho, but depends on what cooker im using.

@@CHIKINWING so do you reckon that water in the pan is only to stabilise temps rather than help the meat absorb smoke? I use a bullet smoker with sand in the water pan temps are steady and heat beads efficiency is far better but just wondering if moisture helps at all. Thanks

Its not necessary no. Generally moisture does help with the smoke and development of a smoke ring but this can be done with a spritz of something during cooking. But you only really need to add "smoke" for the first four hours or so, and personally i wont spritz till after that anyways.

This is Awesome. Quick Question.... We got a lamb shoulder and slow smoked it for several hours. Our shoulder had several bones and some large. How was your shoulder cut or Did you get your shoulder bones removed from the butcher? Our shoulder is tender but we couldn’t pull apart due to the bones. Your reply and recommendation would be greatly appreciated. Thanks for sharing your recipe and technique , it is Awesome!

Thanks for the feedback, glad you enjoyed it. This is a whole lamb shoulder bone in, sometimes its called a square cut shoulder. By the sound of it you may need to cook it longer to a higher interal temp like 210+f. At those temp the bone shoulder just fall out with no issues. Thanks for watching

Hey guys, just had a crack at it. My first try of low n slow bbq, did it with a weber bbq. Texture wise it came out awesome, but I found I didn't get much flavor out of the rub. I used the vinegar mop and it was delicious with the meat. Should the smoke / rub provide tonnes of flavor? or is the rub more for the 'bark'?

Nice, good to hear weasel peniz the rub does give great bark and should give flavoring, although rubs can mellow during the cook. Thats why i season the pulled meat with a bit more fresh rub at the end just to liven up those flavors.

What should it taste like? i thought the smoke flavor was quite subtle. The flavour almost reminded me of a roast, just that every piece was really succulent and tender. With the mop thats when it got a big flavour kick.

You can use a lamb leg for sure cooked the same way. Its just a bit leaner meat and could dry out if not looking after it right.

I like to use any fruit or nut wood. Peach is usually my main go to but Almond is really good with lamb. Use whatever you have tho. 👍 Thanks for watching

Yea for sure you could, it shouldn't change the flavors to much, even just olive oil or somthing would be a good substitution to just help the rub stick

A leg of lamb will work fine, but shoulders do give better results for low & slow because of the higher fat content in them and will stay moister. Thanks for watching

Tried it with the temps noted, way over cooked, stick with ovens people ...avoid pbc/uds.
