Chicken Marsala
Ingredients:
1lb sliced mushrooms
1 medium sliced onion
6 cloves of minced garlic
4-5 chicken thighs (or breasts)
1 cup of cooking Marsala wine
1/4 cup of heavy whipping cream
2 Tbsp flour
4 Tbsp oil
Onion powder
Garlic salt
Slap ya mama seasoning
Directions: If you have bone in chicken thighs remove the bone first. Then season with onion powder, garlic salt and slap ya mama seasoning. In a cast iron skillet on medium high heat add 4Tbsp of oil to the pan and sear your chicken skin side down first for 2-3 minutes or until golden brown then cook on the other side for 2 minutes and set aside.
In the same skillet add sliced mushrooms, onions and minced garlic and sauté until translucent. Next add 2 Tbsp of flour to thicken the sauce and cook down for 3 minutes. Then pour your Marsala wine in along with the heavy whipping cream. Stir together and season with the above seasonings to your desired taste. After put your chicken back in the pan with the sauce. Cover and allow to simmer for 25-30 minutes or until chicken temps to 165. Serve over rice or mashed potatoes and enjoy!
