could you have seared it off at the end using the pit boss barrel? is it even possible on this thing to reverse sear?

Yep! You’d remove it, cover with foil, remove hanging rack and put the normal rack on the bottom ledge. Then just open the air intakes to allow the fire to get hotter for about 5 minutes then sear.

Nice! I have same Pit Barrel and wanted to ask if you used the "turbine" heat deflector on this cook? Also have you tried first throwing the cowboy steak directly on the coals itself… right in the basket and then hang it after to finish it off?

I do use the deflector and haven’t put the meat right on the coals before. Do you recommend it?

Yes, absolutely. there is something very primitive throwing a slab of meat right on a fire. By doing so all you need to do is lay it on the coals a few minutes each side and easily brush off the ash and then continue to hang the steak as you describe. Off the clock delicious.

Yeah I agree - I did some chicken thighs and a couple kielbasa sausages after taking of the steak!
