1. Around 10lbs of Fish
2. 8 Cups of WARM water
3. 2 Cups of Soy Sauce
4. 1 - 1/2 Cups of Brown Sugar
5. 1/2 a Cup of Sea Salt
6. 1 - 1/2 Table Spoons of Garlic Powder

Shame ya ruined the smoked fish with all that seasoning ya used. All that is needed is the brine if'en ya have a good brine.

I've been subbed to Bearded Butchers for about 3 years now. They just reached 1 million subscribers about six months ago. I think they had around half a million 3 years ago! Their butchering skills (now seasoning too) are top notch!

Smoked fish is so good! I've done white bass and salmon so far in my smoker. First time I tried it I did just fillets and it cooked way quicker than I anticipated, but still tasted good. Second time I did white bass whole and was way better! By the way, fresh ginger is excellent mixed in the brine!

After brining the fish did you put them in the fridge or dry with a fan to create a pelicle?
