How to smoke fish. Smoked mullet recipes.
After days of trying to get into the Speckled Trout, we finally just decided to throw the cast net and smoke up some Popeye Mullet, which in this area is referred to as Biloxi Bacon, but I can tell you straight up, I like this better than real bacon any day of the week! We will be trying our luck with the Speckled Trout just as soon as conditions improve for catching them.

Great video, almost made me want some good ole smoked mullet . When I was around 12 years old, we lived at a place called Delta Port . It was off West Fowl River. I can remember catching mullet on bread balls . They were so easy to catch . There also, was a man who lived across the street who cooked in his back yard alot . In fact, he got eating to eat the very first crawfish, that I had ever eaten , and that's when and where I remember eating smoked mullet . He use to take us out gill net fishing too . Man, those where the days ! I have seen the frog - bone seasoning in one of our stores . I was wondering if they also have a good dry rub , for pork ribs , and how good it might be . Oh, those good old days that I was mentioning, we're the 70's .

+Thomas Ballard Thanks so much for the comment Thomas! Since you are talking about the 70's, then we must be pretty close to the same age. I've been throwing a cast net since the early 70's. My oldest brother use to work night shift at the paper mill, and a old man there taught him how to make mullet nets with a bag, not the brill nets like so many people use today. My brother made me one, and man I was down at the point of our beach every chance I got, to catch mullet. My dad loved them smoked, and so did I but we bought those from a seafood place just a few doors down from our house in Pascagoula, MS. It was ran and operated by a family out of Louisiana. The store is still there and now ran by the old mans grandson, and he does a fine job. Bigger and better than ever. They boil crawfish to sell, and smoke mullet to sell, and they now have a full seafood deli, and have for quite a few years now. I own a 8' mullet net now. I should have thrown it for this video. It would have caught more fish then the 6 foot bait net that my son threw, but hey, he did really good with that little net. When I use to catch them as a boy/teenager, momma would just fry them up, but once I grew up and learned how to smoke them, I never looked back ;) Most of the Frog Bone products are geared more toward seafood/cajun style cuisine, but if you want a good bbq rub, check out Killer Hogs BBQ Rub. My son has been cast netting mullets here in North Florida years. Fried them lots of time and had mullet in plenty of restaurants, but never the South Florida style. Thanks for sharing...gotta try.

When I was a lot younger in the mid 70's my family and I would go to Ft Desoto in Saint Petersburg, Fl and catch Mullet for the Row and Smoking. we used mustard and hot sauce but for smoke we used green citrus tree branches. Nice Video I've tried several of your recipes with excellent results. Thank You- Larry

+of1unsoundmind Thanks Larry, and you just gave me an idea. I don't have access to green citrus tree wood, but I do have orange wood which I've used on a few cooks, and it is a awesome smoke wood. Gonna give that a try next time I smoke mullet. The Alder wood is really good, but hard to find. I had to order the wood I have. (I had to order the orange wood as well) Glad you like the recipes of mine that you have tried. Thanks so much for watching and commenting :)

Can't wait to try! Ben fishing the usual for brackish fish and Florida, red, trout, flounder, snook. Those dead gum mullets jumping up out of the water every 30 seconds the entire 4 hours I'm not catching fish have always made me want to figure out how to eat them! Now I know

Great video, I have lived in Pensacola Florida all my life, about 3 miles from the Alabama Florida line it used to be a small community where everybody knew everybody, ain't that way no more. I was raised on mullet, grits turnips fatback and whole milk. We used to have community fish fries, everyone invited, sometimes we had gumbo and crab Jambalaya , it was great.I love smoked mullet but I will have to try your recipes I know they have to taste great I could smell the smoke through my phone.

Thanks Troy! Smoked mullet has always been a favorite of mine, and I've heard them called Biloxi Bacon for as long as I can remember by locals here. I plan on getting a lot of fishing in brother. I've always loved it but kinda been out of the loop for the past few years but getting back into it hot and heavy or as time will allow lol

thanks for your mullet smokin' ideas!....gotta try your technique....i'm a lucky guy--live on a small canal just off boatdrinksasota bay in bradenton, fl.....happen to have a kamado joe jr smoker....mullet, redfish, snook just outside my front door now and then....recently dusted off my fishin' gear and a couple bait nets....time to get busy fishin'--canal shack trim painting can wait....winter weather back to normal--mid 70s....life is rich!

I was born and raised FLORIDA. I now live north Louisiana. Tough to find mullet/roe in these parts. Haven’t had smoked mullet or fried roe in many years! Gosh I miss coastal life!

Back in the seventies there used to be outdoor fish smoking establishments all around St.Pete.After work I couldn't wait to get my hands on some smoked mullet and a cold beer.I wish I could go back in time,man.

That looks good. Here on the coast of the Carolinas , we cut heads off and split down the back too but we usually put the m on grill meat down just long enough to firm up the meat and then flip them back over and coat them with whatever bbq sauce you like. Most of the time it's Carolina Treat but a hickory or something with a little sugar is awesome and goes good with the fat in the mullet. We usually only cook about 30 minutes total.

Yeah, that sounds like a completely different method then what I show here. These smoke for around 3 hours to where most of the moisture is cooked out and they are very firm. Absolutely love em!

Rush, "Biloxi Bacon!" It's astounding how much I learn from your videos! If you like smoked mullet more than real bacon, omg, it must be fantastic, especially done Florida style. I don't know if this recipe would work with bass, bluegill, crappie, catfish, or perch, but I'm about to investigate. +Juanelo1946 John, I tried my best to get into the speckled trout, but the weather is making them crazy right now. Normally we are having average lows in the 40's and highs in the upper 50's this time of year, but I've been wearing short sleeves for days now. Right when I think it's gonna get cold and stay cold, it warms right back up, and due to that, and the full moon and a few other factors, no one can seem to catch many if any trout in our bayous right now. I think they have went back into the flats until the water temp drops. Got tired of waiting on them, so mullet it was, and it's such a good way to eat fish. The south Florida style is just out of this world! We will go back tomorrow and catch some more of these, and fire that kamado joe up again lol! I've never smoked a fresh water fish, so I really don't know the outcome but it's worth a shot for sure! Yes, Destiny did a great job for her first time in front of a video camera. Where I fish there are dozens and dozens of mullet on the seawall just for the taking. They were scoffing up some tuna I had for bait and I'm experimenting with other stuff soon. Can't wait to war some.

Looks real good Rus! We have mullet in our bays here, see em' jumping out of the water in an almost spazzy way. Never tried to catch one, as I think the only ways of fishing for them is with a cast-net or really small hooks with small pieces of chunk bait since they're scavengers. This video makes me want to go out and catch some! Great call on the alder wood. One of my favorites on a light fleshed fish. Cheers Rus!

+Ballistic BBQ Wow, I had no idea the Pacific had mullet! Yeah, a cast net is the easiest way, but when they are schooling, they can get so thick that you can snag them with just a line and a treble hook. I actually have caught them on small bream hooks before with just a little piece of a live worm. They will suck it right into their mouth, but they are a little tricky to catch this way. You have to let them go with it for a bit before setting the hook. I hope you give this a try sometime Greg. It's just normal everyday eating around here. I've used alder wood on a number of different fish, and it is just great on everything I've used it on so far. Smoked some yellow fin tuna a year or so ago, and man it was excellent with the alder wood. BTW, we use the small finger mullet for redfish bait ;)

That's a great vid... we've got mullet in Hawaii too, locally called 'Ama'Ama, and I have a kamado smoker... gonna try some with that mustard/hot sauce. We have lots of yellow fin and other fish, but it's mullet for tonight!

love the mullet video, not your first one, tried to get some a couple times in Florida last year at a couple of bars, they were always sold out, this year I will try to do it with the mullet I catch in Maryland

+doublejbbq Actually it is the first video I've done on mullet. You have probably seen me post several times on FB when I was smoking them. I wasn't even going to do a mullet video because the majority of my viewers either thinks it's a hair style lol, or can't possibly get their hands on them, but I finally said what the heck, I'm gonna do it anyway, because people all over the Gulf and Atlantic can get them.

We use them for bait too. Finger mullet is some of the best Redfish bait there is ;)

Thanks for the vid. I was in Florida a few years back, I was broke and hungry and all I had was a fishing rod and some hooks and no money for bait. I saw a man fishing on a pier and I asked him if I could have a piece of his bait and he got upset and told me that was his food, it was Mullet, I learned something that day.

Cool, always love hearing form other locals! I love catching them in a cast net and frying them while they are still very fresh, and same thing with smoked. It's a really tasty fish.

It was great to see you guys catching the fish in the beginning and the bird. I grew up eating smoked fish. Daddy did a lot of fishing all year long. Now that I know was Mullet is I would sure like to taste. Your fish looked so yummy...mustard sauce bit scary but interesting. :)

+Paivi Project Thanks Paivi! I love smoked fish and especially smoked mullet. I love smoked fresh tuna as well. The mustard sauce would surprise you Paivi. It is so good, and not near as spicy as you would think it would be, but there is a little kick there. Flavor marries so well with the fish. Thanks so much for watching Paivi :)

Smoked tuna huh. I am very little familiar with tuna. Pretty much only tuna I know is the "real good stuff " from the can so I just have to trust you on that one. I wasn't thinking the sauce being too spicy. I was weary of that mustard I am not a huge fan of it. That's kind of strong mustard you put in there right ? So if I would ever wanted to make it would honey mustard do too ? Thanks Rus :)

You can't even detect a mustard flavor once it is mixed in with the hot sauce and cooked and smoked on the fish. Not a over powering mustard flavor at all. I use mustard all the time as a binder for rubs when I do ribs or pork butt, and the flavor of the mustard is no where to be found once it is cooked. ;)

Ooooh that's interesting. Mustard for rubs huh. Today I am gong to be a bad girl and make 2 racks of ribs (diet has left the building) so maybe I should try mustard on one to see if you are right but I only have honey mustard because that's the only mustard I can ..muster. We smoke ours with the bark from scrub oaks and we do it in a burnt out refrigerator.

Maybe on days too windy to Kayak I'd take some of that mullet (bait to me) that I catch regularly here in Key West and give this a try. I smoked my fish for up to an hour before but never tried smoking them like one would a fine rack of ribs.

+ReelGuyTv The mullet down there are really good! We use the finger mullet for bait here, but those bigger guys are going in the smoker. I hope you give them a try. Yeah, this is much different than the way you would smoke other fish, but with that said, you can just smoke them until they are cooked through, and it's still good, but that dryer texture is how it is normally done on mullet. The smoked meat also makes a killer smoked mullet dip

I've never seen this served in our local restaurants, normally the local fish markets and seafood outlets have them, but for the most part, the local people smoke their own. I think the reason restaurants don't serve them is because of the bones. To much of a liability for people that don't know how to pick through bones while eating.

+Smokes A Rollin You will be in the right place! They have some excellent restaurants on the causeway on the Mobile Bay. Dan Webster can steer you to some good places as well. Been a long time since I've been to Mobile and I'm sure places have changed, but he would know for sure!

+Smoked Reb BBQ Thanks Brian! You know, I didn't really keep up with the time to well, because I was mainly going by the look and texture of the fish to know when they were ready. I would say it was somewhere around 4 to 5 hours for that top rack, and around 3 to 3 1/2 for those smaller guys on the bottom rack.

+Southern Coastal Cooking ™ We have been trying to catch some speckled trout, but it has been really bad for us this year. Seems like every time I get to go, the weather is not cooperating or some other problem. I'll get into some before long hopefully. Joe, fried is the only way I have ever had them and I love them like that.

No doubt about it, for seafood, I'm in the wrong place. Water's too warm for trout and there aren't mullet here (few have even heard of it). I think it's about time to take the family on a nation-wide food adventure!

+Tom's Test Kitchen Thanks Tom! It's good stuff. Been eating these all my life. You don't have to have any license to cast for shrimp, but for fish, you just have to have a regular salt water fishing license. Don't have to have a license for crab nets at all, only crab pods

+Chas Moore I don't know what local fish there is in Indiana, but any firm flesh fish will work, actually you can smoke any fish, but the firmer meat fish does really good. May not taste like smoked mullet, but would still be good
