Today I will show you how to make a Smoked NY Strip Steak on the Pit Boss Pellet Grill. The technique that we will use for this steak is reverse sear. We will also create a bacon-onion compound butter to serve with this smoked steak.

Just got my new PitBoss 1150 and doing this NY Strip today...already did my compound butter...used what I had in house (bacon bits, onion powder, minced garlic and going with a little basil for a different taste)....smells great and placed in saran wrap as you instructed....thanks again and gonna stick to that 105-109 to get it Med Rare... great recipe and video....

That is my favorite grill these days! Try that with homemade beef jerky, you cant do much at a time but its awesome and fast to. Thanks for sharing Jeff. Until the next one!

That's a great way to grill a steak Jeff. I didn't know a pellet grill could do that. I get side tracked all of the time and over cook steaks. This steak looked delicious with that compound butter! another killer recipe bud!

i did make some of that butter the other day YUM i got a bunch of steaks already cooked and frozen i'll let them thaw out at room temp. and slightly warm them up, i don't want to cook the blood out, love them bloody rare

Let me retract that. If you live in an area that is 94 degrees oustside go ahead and listen to this guy. But for those who live where it’s cold. Then bring the probe up to 130-135 then sear

I have the exact same grill and I love the crap out of it. I did modify it thou cause I use to have the same problem sliding the plate. Weld a nut to the right side of the tab on the plate, drill you a hole on the right side above the deflector plate and stick a threaded rod thru and screw it to the nut. Just pull it open when ready to sear. Just remember its hot. I lost some fingerprints one day, just reached over and grabbed it one time

You need to update your Pit Boss grill. Moving that grate manually would be a major show stopper for me.

I knew you were in Florida soon as you broke out the 4 Rivers rub. I'm in Central Florida, been eating at 4R for a long time. Just got a pellet grill too and am about to do my first NY Strips on it which is what brought me to your video. I did pork chops today and like you did here I let them go a little too long before the sear. Still turned out good but would have been better at the target temp.

Thank you! My NY strip came out A-M-A-Z-I-N-G! I did as you said, not as you did 😉. Smoked until 105 degrees then seared at close to 500 on my Pit Boss SC1000. Only 45 seconds each side as it wss a thinner cut. The butter mix put this steak over the top. I think your recommendations on wait/rest times is important. I'm seriously thinking of selling my Webber propane grill. Thank you so much sir!

I'm wondering if you could mix sour cream with the butter and other ingredients and put it on tarers. Steaks look fantastic Jeff. Always great to have steak.

The steak looked good; with a nice sear. Does your leave-in thermometer have an alarm function? Those can come in handy to prevent overcooking. I have never tried compound butter, but I need to. The butter would likely be good on a nice baked tater with sour cream as a side to complement the steak. Have a great week.

These look delicious! I think I’ll try a couple of these on my Old Country grill, Hardwood charcoal, Oak wood, over indirect heat. How long were your steaks 🥩 out of the refrigerator before smoking? 🤓

With the Bacon and Onion Compound Butter, I knew I was going to enjoy this cook. One of my favorite bagel smears, is cream cheese, bacon, onions, horseradish and chives, I think a little horseradish in that butter would have worked great with those nicely cooked steaks. That pellet grill really puts out some heat on that high setting. BTW, I'm pretty sure, there is no such thing as a Saran Wrap expert.😎. Nicely Done. Thanks for sharing. 😎.

I love a NY strip steak. I will definitely try this method. My pellet grill doesn't have a searing function. Could I just turn my grill all the way up (400 degrees) and sear them a little longer?

Doesn't it have a small plate you can pull back and expose the fire? If not you might try turning the heat up, putting a cast iron skillet on thereand then put the steak on the skillet to help get the sear.

Congrats on your cooker. 155 to 160 internal temp.

I love my Pit Boss but moving the sear plate was a pain. I added a rod to the sear plate so I can just pull it open without even opening the lid. The new Pit Boss grills have a rod from the factory to open them. Well worth the $4 it cost me. There are KZfaq videos on how to add the rod,

What is the design of the room you're in? It looks like you're grilling in a greenhouse. Genuinely really want to know how it's vented and how the whole setup functions

I just have tropical plants in pots on my lanai. It is screened it. I did route drip water to each pot on a timer, but it is usually turned off because we get a good amount of rain in Florida.

This is why I never use the sear function on my pit boss. They really dropped the ball when it comes to the design of being able to open and close that thing. There should be a lever on the outside of the unit that allows you to open and close it.

Really depends. I've used Traeger, ASMOKE, Bear Mountain and Louisiana Grills. Traders is available locally at Home Depot. ASMOKE sent me their apple pellets which are nice. I'm currently using the Louisiana Grills Tennessee Whiskey Barrel which I will definitely order again.

@@Armadillopepper oh, 180 degrees. Did it maintain that? I tried cooking steaks for my first time tonight about an hour after I put on baked potatoes. I cooked at 230 and it took 20 mins to get to 120. Im still waiting in the spuds, lol.

Taters need to cook 350 for probably 50 min to an hour. The more you reduce the temp the longer the taters take 😀.

You can start them at a higher temp and drop or start them at the smoke temp and cook longer before the steaks. Smoked taters are delicious!
