@lowancrowe1851 pulling the membrane off the back side of the ribs is only necessary when trying to achieve that fall off the bone consistency. When going for the style ribs showed in the video the membrane is left in place. At least thats my experience with ribs anyway and how ive always seen it done. Not everyone is looking for fall apart tender.

The membrane removal is optional. I personally ALWAYS remove it, but when cooking ribs certain ways you wouldn't even notice it was there.

People have been cooking ribs for ages and never pulled the membrane off the back. Do you think all of the bbq restaurants pull the membrane off of all of the ribs they cook? You can score/slice thru the membrane and that works, but leaving it on doesn't cause problems.

I actually won a local rib cook off with this technique. Just a little different but not much. Always leave the membrane and use st Louis style ribs. Mine had to be whole racks so I wrapped them in foil with the butter but your technique by cutting them is best. I’m just an amateur but I beat a bunch of dudes whose whole life is cooking ribs. I felt pretty good about myself. Cooking is instincts and experience and living to eat something good. To many people just follow other people’s work. This is a great technique for sure.

You can get a small smoke for cheap. Or add wood in aluminum foil to your regular yard grill to get smoke flavor. It doesn't have to be a big smoker

When you’re all done cooking ‘‘em - TOAST THEM! In a toaster oven or regular oven until they get sticky and crispy so they sear on the outside and locks all the flavor in! ❤

Only upgrade is if you pull off that connective tissue on the bottom side of the rib before cutting and grilling it. It comes off in one motion and only takes a couple seconds

You don't have to pull it off. People started seeing it being done and it blew up. Think about it, do you think a lot of the bbq restaurants are pulling it off of all of the ribs they have to cook? I've seen on some bbq shows where they will just score/slice across the membrane.

Far be it from me to critique, but I’d personally never do smoked ribs in a pan with that much juice. I always do a straight double wrap of foil after about an hour on 225 or so. Keeps a lot of the juice in there, but doesn’t saturate it. Need to drain the excess as soon as you pull em off too. But, again, that’s just how I do it. Vinegar spray is vital though.
