Just ordered my copy of your upcoming book cowboy. So glad I stumbled across this channel a few months back. You guys are so authentic, entertaining, informative and based. Thanks for the recipes and the respect you have for the military. I served 2 tours in Iraq in the Marine Corps Infantry and was shot in the Battle of Fallujah in April, 2004. I just fixed a beautiful brisket, smoked it. About 12 hours and one hour of my favorite BBQ sauce...my own measure...and no rub but salt and pepper...turned out perfect like a Tex’s BBQ heaven.thank u for the inspiration...

Hey! I just smoked one of these Saturday! Cooked up the bacon on Sunday... Best bacon I ever ate! I cured it for 10 days in the fridge..and didn't use your fancy rub coffee there (will next time). This method looks a lot more in my time line. 10 days was a long wait. That looks tasty!

Hey there Kent! I hope you made vlogs of the roundup of all of you guests and all of the cooking that took place. If not I'm gonna have to give you a sad smiley face. You missed a lot of great content that a lot of us would have liked to have seen since we couldn't be there!

I remember when mom sent me to the grocery store to buy some sow belly when I was about 7 years old. She didn't drive so I had to walk to town . Well no one in the industrial North knew what sow belly was. I knew I better not come home without any sow belly, but it looked like I had to leave because no one knew what mom wanted. I thought about running away from home to to get back to Kentucky where they knew exactly what sow belly was. But I figured that was a bad idea and went home expecting to get whipped with a switch. I was surprised that mom wasn't mad, but felt sorry for me. She thought I knew what it was and could pick out a package. I still don't know what the name of it is up here in Ohio. I remember what it looks like, and its still sow belly to me. I guess it's pork belly here too. But is it the same as boar belly?
