So after trying and trying to do shredded or pulled beef it came out like yours did here as you explained it doesnt quite pull like a good butt does, did some research and here's what you gotta do. Smoke until 155 165 like you did. Then do the foil and bring them to like 210 215 internal. Then let them sit in cambro for a few hours. Youll have beef shredding like pulled pork. Nice vids !

I make these all the time... just about the same way, but I take the internal temp to 210 - 212, drain juice, re-wrap with foil and into cooler for 1 1/2 - 2 hours... then you get that "buttery smooth" pull apart. I'm defiantly going to try that Tiger Sauce.

Looks great. I haven't tried a chuck yet. Seems more people are doing that cut now instead of brisket since it's easier, much less in $$, and takes way less time. I'll definitely put this on my list of future cooks. Thanks for a great video.Nice sammiches.

There's a lot more marbling in chuck roasts so they're just easier to pull after all of that has broken down in the meat....and yeah, like you said, they're much less expensive.

Looks really great! I'm going to copy that recipe and grill my rolls and top it with pickled red onions with that tiger sauce

That's funny you mention the pickled red onions...b/c in the Cooks Illustrated Meat Book, the recipe I got the tiger sauce from is for Baltimore Pit Beef, and when I made that I also topped it w/ pickled red onions and it was amazing :)

Thanks Sean! Def try it out. If you cook 5-6 lbs like I did you'll have plenty of leftovers for lunches for a few days if you don't feed a big crowd with it :)

Did you see deep red/pink smoke ring in the meat? That means the meat is full of a nice subtle smoke flavor since it was smoked. That's the biggest difference...

What type of wood did you use for smoke? That beer isn't available in my area, any recs on which dark beer that is available everywhere?
