GOOD GOD! I went to the porterroad link you have here. I can NOT believe the cost of some of the cuts of beef. REALLY? It would be cheaper to raise your own. LOL. EXCELLENT videos from Chuds BBQ - you have become my all time favorite ("Pat it Dry" and "Rookie Move" are NOW in my repertoire of favorite things to say. But then, it is easy to please a 71 year old rural guy. Definitely going to try this, but the meat will definitely NOT cost what this one does. Great time catching up on your videos.

Why would you want a pink piece of meat unless its a smoke ring? Those rare steaks taste awful. Cook the pink out of them, render the fat like EVERYONE likes and eat a nice well done juicy steak. If anyone EVER did a side by side rare vs well. 99% would pick well, and the other 1% are liars

I grew up just outside of Philly in south Jersey. At the age of 22, or so, I befriended an old Italian guy at work and his wife started packing an extra lunch for me. She made a bunch of really good sandwiches, but my absolute favorite was the steak sammy. It was usually cold but I've recreated it hot and it's awesome either way. It was Focaccia, sliced leftover steak, thick slice of Swiss cheese, and a liberal amount of her steak sauce (which was simple but amazing). Steak sauce was just around 3 parts ketchup, 1 part balsamic vinegar, and a dash or 2 of habanero tobasco sauce. I know it sounds crazy, but man it's so good..

That sandwich has brisket written all over it. Sliced brisket that has been seared on the Chudpress of course. I couldn't bring myself to do that to a ribeye. All the best!

Each component looked fantastic, but I think I would have picked the steak out and eaten it separately, but that’s just my opinion. I also am not usually a fan of focaccia sandwiches, but I’ll bet if you left the steak off and toasted the sandwich a little, it would be killer. I love what you do Brad. Been a subscriber from very early on and I think you’re one of the best Foodtubers on here.

Bradley, you missed an opportunity here. Try cold smoking some Cooper Sharp cheese and adding it to this sandwich. Gazzo’s in Pottstown PA has been rocking the smoked Cooper sharp for a while now. It’s a game changer.

If you want your focaccia crispy on the outside and tender inside, flip the focaccia once or twice while cooking. It works

I always save half my steak, so that the next day I can make a very similar sandwich next day. I use a smoked gouda though. I usually do a 12hr salt brine on a strip steak. FANTASTEIK!

I think a nice piece of sirloin steak, sliced thin, would have definitely made this sandwich equally good. Maybe you should try that next - like a steak sandwich remix? Everyone knows ribeye is fantastic, but it doesn't make the best roast beef. I'd definitely have devoured that steak on its own - maybe with a loaded baked potato ^^

Brad! I know it’s not your forte but how bout showing us how you would cook a brisket in an oven. Wish I could cook outside but live i an apartment and not allowed to bbq so only option I have is oven. Show us how you could get as close as possible to a smoked brisket using an oven.
