Black peppercorns - 2 tblspn
Fennel seeds - 1 tspn
Cumin seeds - 1 tspn
Coriander seeds - 4 tspn
Cloves - 15
Cinnamon sticks - 5
Cardamom - 12
Black cardamom - 1
Dry ginger - 3 pieces
Red chillies dry - 4
Mace - 3
Nutmeg - 1/2
Saffron - 3 pinches
Mixed with water
Salt - 2 tspn
Lemon - 1 big
Olive oil - 3 tblspn
Mutton - 1 kg
Mix masala
Marinate for 30 minutes
Garlic cloves - 10
Water - 1 litre
Pressure cook under low
Flame for 30 minutes after
A whistle
Olive oil - 1/2 cup
Onion - 1 big
Green chillies - 3
Mandi masala
Salt
Water - 9 glasses
Rice - 1 kilo (6 glasses)
Dry lemon
Charcoal
Garnish with
Ghee fried almonds
Cashews raisins
Sliced onions lemon
Cucumber carrot
MANDI CHUTNEY
Coriander leaves handful
Salt
Garlic cloves - 4
Green chillies - 2
Lemonn- 1/2
Black pepper pdr - 1/2 tspn
Cumin pdr - 1/2 tspn
