Ingredients:
110g sugar.
50 g butter (well chilled).
80g liquid milk cream for whipping (33-36%).
75g roasted salted peanuts (if using unsalted peanuts, add 1/4 teaspoon salt to the caramel).
70 g chocolate biscuits.
80g dark chocolate.
100 g liquid milk cream.
150 g liquid milk cream for whipping (33-36%).
1 tablespoon powdered sugar (or to taste).
Place the ice cream in the freezer until completely frozen (about 4 hours).
Ganache:
100 g milk chocolate.
20 g odorless vegetable oil.
30 g chopped roasted peanuts.
