LFO and Envelopes are 2 control modules that are designed to bring movement to your sound. They are very effective tools to create interesting designs. Use them rhythmically with an LFO rate synced to the tempo, or use slower LFO to create an ever-evolving textured sound for example.
It's very common to use them on the amplitude (the volume) of your oscillator, on the filter cutoff or even on the wavetable position, but don't hesitate to try it on more unusual parameters. It can be on the drive of a distortion, the dry/wet of a reverb, and you can even combine them by using and LFO on an envelope's attack for example!

One of my favorite sound design approaches is connecting lfos to envelopes Or in Ableton use SPLTTR to process the highs miss and lows and use envelopes And lfo to create waves that react to generated and reactive modifiers

I think it's confusing to name "sustain" a phase or stage. It's a level and has nothing to do with time. Otherwise, fantastic and inspiring video, as always!

Still don’t understand why the Filter Envelope Depth Knob is called “Freq CV” ?

Could you please help me clear these three doubts? 1. Does the Filter Envelope add anything to a key being played like harmonics / frequencies or is it simply cutting off / filtering the frequencies? i.e. Can it make percussion instruments sound like piano keys with long release and short attack, because I've read that Amp envelope controls the volume, Pitch envelope changes the pitch/frequency and the Filter envelope changes the Timbre of the sound? 2. They say that an Envelope Filter is dynamic and it changes its cutoff frequency depending on the amplitude of the signal but isn't that the same for Amp and Pitch Envelopes as well? since they don't output the same volume or frequency for different signals / keys. 3. Please tell me if I'm wrong here: Pitch Envelope changes a key's default pitch ( go up or down by a certain amount in units of semitones ) whereas Filter Envelope makes ( two theories ) a. Make all the keys start from their default frequency and move it all the way up / down to the cutoff frequency and the distance between them is determined by the Envelope's amount. Negative Cutoff frequency means a note moves down the frequency spectrum to become duller. b. Make all the keys irrespective of their default frequency / pitch / notes / tones start at the cutoff freqeuency point and move it either up ( brighter ) or down ( duller ) by the Envelope's range. ( This sounds too dumb to be true but I need to confirm ). So which part of this process makes the Filter Envelope an automated dynamic filter. Seems like all three are automatic once the initial values are put in.
