Briefly, this video demonstrates how to make fast and simple natural organic sour or non-sour lemon candies.
To make these candies you will need the lemon zest, only the zest. Be sure not to use the white pulp beneath the outer skin - as it is bitter and will make your candies bitter.

If I wanted to use malic acid, would I put it in at the same time as the citric acid? And would I use them both? Or substitute the malic acid for the citric acid? I really love sour candy and can handle it really well, thanks so much!

Hi. Sadly, I have no experience with Mallic acid - I've been looking for it, trying to buy some for years now - no vendors sell it. You can buy it - but the minimum wieght is around 25kg. As for using it - yes, I suggest you try adding it last, then pouring rapidy. You can use both citric acid and mallic acid - I know there are commercial candies that use both. I love sourn candies too :) Hope I helped a bit. Cheers Saar

What should I do if it sticks to the wax paper? I did this a couple days ago without citric acid. But when I put it on the wax paper to cool off it just wouldn’t come off.

Hi. Sorry for the delayed reply. I didn't get any notification for your question. Try parchment paper, not wax paper. As an alternative you can use an oiled marble table or plate.

Can lemon candies help me quit smoking? I’m planning on taking up skateboarding. Been a smoker long enough. 1 1/2 packs per day. Marlboro red. Sometimes menthols. Began smoking since 5th grade. Hiding in our attic. I intend to excel in the sport. Bought a new skateboard today and i’m trying to learn ollying. But I’m easily short of breath even after just a few jumps. I’m 33 but I’m not giving up learning something new and being good in it. Could it be my smoking?

Email me and I'll give you a sugar free lemon candy recipe (oe a sugar based if you want). Neither will help with the smoking but it will keep you busy. Try also a real mint candy - you will like it :). Quitting smoking is hard, I know. My Mom used to smoke. Start slowly with sports and allow your body to prepare... Good luck and be strong!

Uhmm... I was looking for someone to produce sour candies using solely lemon and/or lime instead of citric acid and with the exception of sweeteners. Can sour candies be made using only the ingredients listed above? Of course, with corn syrup.

Very good question. Depends on the candy type: gummy candies, yes. Hard candies, no (citric acid+heat=broken sugar molecules and a very bad flavor. Toffee/taffee...maybe, needs testing. Loved the idea, I'll test it.

just quadruple the recipe ... 1/2 cup corn syrup, 1/2 cup water. 1 1/3 cup sugar. lemon zest. and if u follow his citric acid about 16 grams

What I like about this smaller batch is if you don't like the flavor, you won't have 100 candies to eat. You can always mathematically figure out a bitter recipe to your liking I suppose.

How long these candy will last if I store it in an air tight jacket?

Oh, about 6 months, depending on the candy. Even airtight "welded" bags are not really air tight. My most preferred storage method is the fridge. It keeps them dehydrated for over a year and I have tested candies that were stored for over 3 years in the fridge and were just fine - hard candies, that is.

I saw your video on earl grey tea candy and I liked it very much 😀😀 I want to make them in my shop and sell them. Do you think they will stay as long as 6 months..

@@ayanbanerjee8809 good question. If your air-tight containers are not 100% sealed - most arn't - I suggest you store then in a fridge. That should do the trick.

can you recomend anything besides the corn sirup , in germany we rarly use these (I don't even know if we got any store that sells some)

Hi Tobias, you can try and find some glucose syrup - that is a good substitute. I am working on finding a replacement. Inverted sugar or golden sugar syrups may work also but I have no experience with these... I do plan on trying these as well in the future. Good luck and keep me posted!

How much malic acid would you add? I love super sour candy!

Hi! I would suggest 2-2.5grams for a 70gr sugar batch to begin with - but I should mention I have no experience with malic acid and I can't find it locally. For citric acid - about 3-3.5gr are the top and you can add more but it will not fee more sour. If you really like sour (I do too!) I would combine citric acid and malic acid. Hi! I really like sour lemon candies and I’ve tried this recipe about three times already but every time the liquid burns before it reaches three hundred degrees and come out brown with this burnt aftertaste. I just wanted to know if there is a certain heat level for the stove I need to use or something? I really love this recipe and want to get it right.

Hi Lexa, I see two possible problems that may cause this burn and aftertaste: 1. Your flames are way too big for your pot and are reaching the side of the pot. This means that the sugar on the side of the pot is overheating and will burn and give you a poor flavour. Make sure the flame doesn't reach the side of the pot - just the bottom. Make sure to stir the candy mix from time to time and don't forget about it. 2. The most likely answer is that your thermometer is not accurate. You can try doing it without a thermometer - check my webpage on how to do it without tools : www.spicecandies.com/?page_id=200 Also, consider using another thermometer - sugar based candies will not burn below 180c so your thermometer has a huge error. hi can you replace corn syrup with cane syrup ? will it work well ?

Hi Yuki, I would expect you could - but I have no cane syrup to try it out. I would also guess you will need to boil off all the water and that may take some time (depending on the water content). I would definitely give it a try - don't be afraid to try it out. Start with small batches (1/3rd cup or 1/4cups) and see how you do. I would also try it first without any flavoring added - to see what is the natural taste as is. Good luck!!!

Yes, actually. In Europe, cane syrup is used more extensivly, and is used especially in hard candy, just like corn syrup is used in the US. Our works just as well. Good luck! Hope I helped!

Hi, You can - if you are making toffee But not for hard candies - Sorry... that's not possible... Lemon juice contains citric acid - and citric acid breaks down sugars. So as you reach the crucial 150c it will start caramelizing your candy. Still these are wonderful candies - give them a go and you won't regret it. Enjoy Saar

@@spicecandies I keep having the same issue of rapid caramelization with citric acid. How did you manage in this video? Are the crystals big? Did the sugar mixture cool to a certain point?

@@origamigek hi. Citric acid breaks sugar and boosts caramelization. Add it at the very last seconds before pouring the candy. Quickly mix it in and pour! Once the candy cools this is no longer a problem. :)
