You are so right. I grew up in Romania and when my mom cooked or baked she never measured anything. We didn't have any measuring spoons or cups or measuring scales. Everything my mom made came out yummy every time. 😋

I DID IT!!!! I watched this video and read the instructions at least 4 times, and again as I was doing each step. My loaves turned out great! Light and fluffy with beautiful air holes all the way through it. My 7 year old son, who is our ultimate bread lover, absolutely loves it. Thank you so much!

Question from a newbie....after the stretch & fold process, she said cover it and let rest for the bulk fermentation process, is that refrigerated? I assume not but wanted to clarify. Thank you!!!

So if you want this bread for Sunday’s Lunch. What day would you start this process? Thursday? What day would you put it in the oven?

I'm at the ripe age of 60 and found you to bring back memories of when I was a child. We lived on a farm and everything from food and clothes were made on the farm. We have a yeast that has been past down for over 150 years. Your skill level is refreshing... even your daughter sews wonderfully.

After watching this recipe video for faaaar to often I finally found my problem :-). When Lisa says you have to stretch and fold every 15 min for the first 3! She means the first 3 STRECHES not the first 3 hours! Don´t ask me how I got the idea that she could have meant hours but I did. Although I stretched the dough wayyyy to many times it still looked ok, but I somehow knew I´m doing something wrong. So if someone else should understand wrong: its about 6 Stretch and Fold rounds and not 6 hours :-))). Thank you Lisa for allll your videos and great recipes they taste delicious, you are amazing and such a great Homemaker. Alll my apreciation and support!

WOW. No wonder! bakeries charge so much for "artisan" breads. Hats off! to those of you who attempt this. Love the wheat pattern on the bread. So so pretty.

I imagine this process becomes routine and easy once you've done it a few times. It's definitely a lot to remember for someone new to sourdough - but you make it so much more approachable for people like me, who is more of a 'set it and forget it' type! 😄

Yes! The first time I heard sourdough I thought, "how the hell do you have time for all that.' After a while it became second nature and not time consuming. How did it end up going for you?

I love watching your hands as you work. Wonderful tutorial, so calming to watch the process. I love seeing designs cut into bread or braiding etc. You’re right, it doesn’t change the flavor but it brings beauty to the table and it is rewarding! Can’t wait to give this a try! 🥖

This was incredibly helpful! I had actually pulled my sourdough starter out of the fridge yesterday to bake bread in a few days. I've never baked bread with my starter and I had no idea what I was going to do. So, this was perfect timing! I don’t quite have all the tools to use this method, but now I know what to add to my collection. Thank you!

Tip. Please allow your bread to cool at least 1 and a half hour before cutting. I’m sure you’ve noticed that when you cut bread when hot it becomes gummy. That cooling process finishes cooking

Yes! I noticed that too. Let the steam finish leaving the dough. A really acidic sourdough is even better the next day. I believe that's how it's sold traditionally in much of Europe.

First time trying to make sourdough bread, but I've been making regular bread for about 3 years....during the stretching process my dough is super sticky, like a lot is sticking toy hands, it doesn't look like that's happening to her. Should I be adding some flour to mine? With a regular (non sourdough) bread I would be adding flour right now....but I'm not sure if that's the right thing to do here.

@@JddB229 Hi, please do not add more flour. Make sure your hand is wet with water. Next, squeeze, stretch, and slap the dough against the bowl- rubaud technique. This will strengthen the dough and help the flour to absorb the water.

This recipe turned out great! I had a sourdough bread recipe and have fought with it constantly sometimes getting a good loaf and others dense and disappointing. On a whim I tried your recipe it turned out amazing, refrigerating really makes a big difference! The most my dough has ever risen and big holes. Thanks so much for posting and for the step by step tutorial!

Thank you for this video. I have watch and followed the instructions of dozens of sourdough bread videos and, although you didn't tell me anything I had not heard, you organized it and presented it in a way that made it SO much easier to execute! It's like you know my brain!

LOVE your tutorials! Yes, a digital scale is a very useful tool. I keep mine in a clear plastic bag to help it last longer and keep foodstuff from getting dropped onto it.

Today, I baked my first sourdough bread following your method. Lisa, I watched your video ,sourdough for beginners, over and over before I began, then had it on through the first time process. I’m so thankful for your video instruction; thank you for sharing this process with us newbie’s. My dough was not as light and stretchy as yours, yet I persevered and did the best I could. The timing of this video couldn’t have been more perfect! I created my starter last year and had I couple less than stellar loaves of bread. I’ve been enjoying sourdough pancakes and pizza crusts and wanted to give bread another try. It’s in the oven now... I’m so excited!

This was so thorough!!! Thanks so much! For those looking for substitutions:: In regards to the basket, one video I watched recommended the plastic baskets burger places uses. The dollar store has them. Also when my Dutch oven is dirty or being used, I'll bake in a pan and place a pan over it. Frugal fit mom recommended that and it works well!

I made this today too. I halved the recipe as I only wanted one loaf & only used bakers flour. Long process but soooo easy. I’m so happy with the bread I made. My first ever sourdough bread. My starter is only a month old. I knew it was a success by all those lovely holes throughout the loaf. LOVE IT. Will make it again, & again. Thank you

Lisa, just wanted to thank you for this great recipe. I have tried 6 or 7 different recipes for sourdough and yours is by far the best. I was so excited because not only did the bread look amazing but it was also delicious. I will continue to use this recipe and share it with my friends who also have not been very successful with the whole sour dough bread making process. I just wrote down all your steps! Got my first starter going right now. Thank you for the tips and tricks I know its going to come out amazing, We have the same cast iron dutch oven!! Mine was handed down to me from my Great Aunt and they used it on their camping adventures back in the 50's I love the energy & history that they hold..

Fantastic tutorial- love how you quickly run through it in the end. Btw if you add a pinch of bicarbonate of soda/ baking powder it removes the sour taste which is great if you have accidentally left it to bulk ferment for too long! Xx

Best way to feed a family is home baked . Thank you for teaching. My children only had lunches made with homemade bread and they didn't think it was different. One day my son asked for an extra sandwich. I thought he was giving it to someone. Nope, the ladies in the office purchased . He did that for a few years as did my daughter. Homemade bread makes delicious sandwiches

Thank you for this tutorial. Your previous videos taught me (one year ago, during quarantine) how to make a sourdough starter. We make your sourdough pancakes at least twice a week. Today, I followed your steps and I currently have my first loaf in the fridge for the 14-hour rise. Might I add-- I divided your recipe in half to only make one loaf--I think it is going to work out perfectly.

Learning to make sourdough takes a lot of practice, but with your videos I'm getting better. My loaves yesterday are still in the fridge and I'm going to bake them this afternoon and it looked better than the one I did the previous day. I just think my starter is not quite as mature as it should be yet, but the bubbles are increasing and I feel like I'm getting the hang of it! I really like this approach - intuitively understanding the timing and signs of feeding your starter and such instead of following arbitrary instructions that may not work for everyone because of different conditions and ingredients. Thank you for these videos!

Loads of pancakes, beautiful sourdough bread, homemade tortillas, biscuits and so on. I watch a lot of videos to learn what I can, and rarely give thumbs up or make comments. Maybe once a year. But this video is ABSOLUTELY the best I’ve seen on this topic. So concise and smooth steps, with great video demo, and lack of too much extra talking that would make things confusing (like others do). And the quick final summary is the best idea yet! Even the recipe on the blog makes it easier save and follow as you are baking. These steps are more important than any recipe, and they can be more confusing as beginner bakers are trying to figure out what comes first and what comes next. And when do I do what! Thank you for sorting all of that out SO NEATLY! Now everyone can go try your recipe, or any other one they have been trying to make work. It will be the learning of this TECHNIQUE that will help them all 😀

Been making sourdough (attempting) bread for prolly a year. Everything I’ve made was certainly edible-some just dense with very little oven spring, but nonetheless tasty. The bread I baked today, which was put into the fridge 24 hours earlier, had an oven spring of nearly 5”! My attempt several days before this one, was the first I actually slipped in the garbage…..it resembled a puddle of dough. And the quest was on to figure out where I went wrong. It was the same recipe I’ve used for the last year with usually pretty good results. But today I stepped up my game thanks to you, coach! I appreciate you’re natural, this is me, not glamorous, no frills very down to earth presentation. You have a far from high maintenance appeal. I come from generations of bread bakers even though I didn’t bake all that much bread over the years and just learned to bake sourdough in the past few years, this is the first time I’ve heard someone say those nice holes you want in the loaf 😅 All the bread was baked in loaf pans and poked with a fork to AVOID those air pockets . My mom baked 9 loaf pans of bread every week , it was a stable for our family of eleven. Yours looks delicious! I think I’ll try it your way .

This bread is amazing. I've made the recipe twice now. The first time I brought one loaf over to my in-laws' for a birthday and the second time brought a loaf over to my dad's after he had surgery. All of the family members who tried it have said it is wonderful. If you have a starter then you definitely need to try this.

What are the first ingredients for the bread? I didn’t see any measurements for the initial flour, water and starter.

@@lorisiragusano1556 200g wheat flour, 250g bread flour, 500g unbleached all purpose flour and 650g warm water. Autolyse stage 30 mins. then 200g starter & 20g fine sea salt. Its in the very begining. Hope that helps you.

I've watched quite a few sourdough bread recipe video's, yet I come back to this video every single time. I rarely comment on KZfaq video's, but I've come back to this one video so many times I just had to say something. I like the homey feeling I get from the video and of course my bread comes out beautiful each time. I will add that my oven is different and the loaf came out a little burnt the first time, so I've lowed it to about 450 and has made all the difference in the crust.

This is exactly the video I have been searching for - I have been feeding/discarding my starter for a few days now trying to build the confidence to actually make a loaf but haven't been comfortable enough yet. Your video breaks it down perfectly, step by step and shows how with each step, which is exactly what I needed. Thank you, so much for this! I've tried a few different recipes but I keep going back to this one. Something about the way you explain the process just clicks with me and it produces a lovely loaf every time for me! The only time it maybe isn't perfect is if I'm not timing the use of the starter or bulk ferment perfectly. But overall I get such a yummy and fluffy loaf 🥰

This is a great video! I’ve watched a lot of videos seeking good, clear info on how to do this and this one deserves 5 stars for clarity and demonstration of techniques! Yes, watching it several times was kind of necessary, but she cuts to the chase and is not all busy being clever and overwhelming with unnecessary details and chemistry. Wish I had found it before watching too many hours of other videos that were NOT very helpful! I had success with my first try! Thank you!

Hi Lisa thank you so much for this video.Just took out my first two loaves of sourdough and you’re right they are delicious.Did not have room in the fridge so left it out on the table the kitchen was cool last night.The air holes are not as big as yours but they are there.Will definitely try the fridge next time.The crust is amazing!Gave the dog a piece and she keeps following me around for more. Watched this video as well as the newest sourdough one that you had done for inspiration.This is life-changing have had my starter for over a year your videos inspired me to try bread....

I only bake 1 loaf, so I keep a smaller quantity of starter, in the fridge. I take my starter out a day before, (bedtime) to warm and feed it. Use what I need after it rises, put the rest back in fridge. Always making a little more than needed.

Nothing but Love & Respect for my ancestors that didn't have a scale, fridge, parchment paper, tea towels, etc. I'm on my 43rd time of watching this video & so far, I've learned not to make sourdough bread unless you plan to have two straight days off work or nothing else planned. My dough is in the fridge, Finally. I'm praying it comes out amazing tomorrow!

How did your bread turn out? I just baked my two loaves earlier today and they finally turned out great! After so many attempts, I realized what I was doing wrong. I didn’t let my dough rest long enough prior to the stretch & fold process. Because my house is cold I let it rest 3-hours instead of 30 minutes and that seemed to do the trick! I hope yours turned out lovely as well.

That is what sourdough baking is all about really. It is very difficult to give hard and fast rules because there are so many variables that could impact your dough. Understanding how the dough should look and feel and making adjustments as you go is really the key. Good job!

I let my dough rise in a ceramic bowl inside of my instant pot liner on the low yogurt setting for consistent warm spot

Oh my gosh, that’s a great idea! I was just brainstorming to find a warm spot and ended up putting it in the oven with the light on and then setting a bowl of steaming water next to it XD I’m gonna try this next time! Thank you!

I’ve used a heating pad on low to make a warm place for the dough and it works well, too. I just love your videos, and thank you for the detailed instructions! You’ve helped me realize a couple of places where I was going wrong. Either way, I think my husband and I gained 5 pounds each since we started making sour dough bread and flatbread, cinnamon rolls (oh - to die for!!) with our starter. So delicious, thank you for the inspiration. We’re going to have to start giving these as gifts instead of eating them ourselves!🤣❤️

A heating pad works great! Also, you can turn your oven to warm, then turn completely off and put your pan/bowl inside to rise.

WOW!!! I ventured into the sourdough world a couple years ago. Lots of success, but this is by far, over the top awesome, and the best that's come out of my kitchen yet. Followed instructions in a very precise manner, and it's awesome. This is now my "go to" for basic sourdough bread. Thanks so much for sharing it.

Lisa, I love you videos! I make sourdough often but have never done this six-times folding method. Am excited to try it! Questions: you have such a huge glass container for starter; do you leave it out every day? I know you bake a lot with it. What are some of your go-to sourdough discard recipes, for example? I see in some of your other videos, you whipping up what look like biscuits or English muffins for the kids and I’m assuming that’s sourdough too. Have you shared those kinds of recipes, because I’d love them! Can you share your daily feeding of starter and its uses? Also, my dough often sticks to the VERY well-floured linen towel. Perhaps I’m not leaving it in fridge long enough for it to tighten up more? Thank you for your channel!
