How to make Southern fried catfish Louisiana style. This is a thin cut New Orleans style catfish that has a perfect balance of corn flour and corn meal with Cajun seasonings for a perfect texture that is exploding with great flavor.

Just finished my left over smoked pork steak lunch and watched this video...now I want fried cat fish.🤘 Great spread and I like that vacuum tumbler. Simple easy to follow recipe. Nice job Rus!👍

I've seen some videos where people use their hand to operate a deli slicer. They give me the willies. I'm glad you are sensible enough to use the plastic screen.

Rus I lived in the NO area on the Best Bank, Gretna, Marerro for 9 years and I ate a lot of fried catfish but either I don't remember or I just didn't pay attention to really thin catfish. But that was over 34 years ago. I have never saw catfish done this way or marinated with hot sauce but it looks good. I will have to try it one day after I get off of this Nutrisystem Diet my wife and I are on, today is our 6th day. Thanks for the video.

I think a place outside of New Orleans really popularized it Mike. Middendorf's is the name of the place, but there are other places in the New Orleans area serving up thin cut catfish. Thanks for checking it out!

Fantastic Rus! We usually get our fillets from a fish market not to far from our house then I cut them into nuggets. I like your idea of fileting the fillets. When you make them thin like that they're probably like eating chips.. so you could call that "fish chips n chips" great video brother keep up the great work.

That's my favorite hot sauce, too. It's also what my wife prefers in hot wing sauce; over Frank's. I don't catch too many catfish, but I might dedicate a pack of bluegill fillets to trying this recipe. I like the marinator/tumbler. I may have to get one of those someday. Take care, Russ.

Hello Rus. That deep fried catfish looks fantastic. Maybe I don't get out much but I have never seen it cut like that before frying... what a great idea! I live on the Texas Gulf Coast so I get a lot more salt water fish than fresh water... I wonder if I can do that with some specs or reds.. hmmm... Take care Rus.

love your videos… i did notice you cut them thin, but i prefer them plump and meaty. i only once had them cut thin when a beloved seafood place, in fredericksburg va, said “two catfish filets” and i noticed it was just one cut like that. so, i was not too happy about that, but its all good, just didnt want to pay more for less was all. keep up the great videos!

Yeah the thin cut catfish is a popular thing in the New Orleans area and I love them prepared that way, but we normally cook whole filets here in Mississippi. Love them fried or blackened

Why do you think so many restaurants serve the catfish filet thick or whole? I would think with catfish being more of a fatty fish, it serves a lot more well to make it thin cuts to give it a better fry.

Most restaurants normally do serve it as whole fish filets, but in the New Orleans area, this thin cut deep fried is very popular and really bring in the people to eat it. Now I know why! Should have been doing this all along on many fish, not just catfish. Thanks for checking it out!

Not these, just as tender as they could be with a nice crisp to them. The liquid marinade along with the very fast cooking time insures moist, tender, thin and crispy fish every time 👨‍🍳

That is different.........I love catfish especially fresh caught catfish which thankfully is plentiful where I live. Going to have to give this a try if I can find my meat slicer. :-) Good video...................my mouth is watering....... PS, I could not find your hush puppy recipe on your web site Rus. I'm not sure why you can't open the Amazon store page. I just clicked on it and it brought me straight there. I thought the hush puppy recipe was on my website, but It's not, so I will have to add it, but I'll give it to you now as well. Hush Puppies Ingredients: 1 box of Jiffy corn muffin mix 2 eggs ¼ cup of all purpose flour 1 teaspoon of garlic powder 1 teaspoon of onion powder ¼ teaspoon of sea salt ¼ teaspoon of cayenne pepper About 3 tablespoons of chopped green onions Directions: Mix all ingredients, but don't over mix. Heat oil up to 350 degrees F, and take a couple of spoons and spoon a small amount into the hot oil. Repeat until all the batter is used. Cook until golden brown, and flip as needed

I've had triggerfish before. Have a leathery skin on them which makes them a trick to clean, but they taste pretty darn good. I bet they would be great on fish tacos like you said!

Make a shallow cut across the lateral line just in front of the tail then, with the knife pointing out (like a letter opener), zip the skin up the top and belly of the fish to the head. Grab the cut you made first and rip the skin toward the head. It'll peel right off. Flip the fish and do the other side. Easy Peasy!

I thought when pulling a vacuum, the liquid was pulled toward the machine, not pulling liquid into the meat. Is my thinking wrong?

Depends on the device. With a vacuum tumbler, the entire chamber is under vacuum and the marinade is forced into the pores of the meat. A chamber vac works the same way, but a regular vacuum sealer such as a Food Saver only creates vacuum in the bag, and everything on the outside of the bag is not, so it acts like pulling a beverage through a straw, so the liquids run towards the source of vacuum and actually pulls moister, marinades etc out of the meat

Remoulade would be great with this. I usually mix the tarter with the cocktail sauce along with a little more hot sauce and even ketchup sometimes. Been doing that for many years.

Russ, I used the link to check out the tumbler. I couldn't find any info as to the size or capacity of the machine. Is it at least big enough to do three or four pounds of meat at once; without burning up its motor?

It is a little over 6 quarts and should handle 4 to 5 pounds easily.

Your going to have to get good boudin in Louisiana. Not a real big thing here in south Mississippi. I always buy boudin when I’m over there in Cajun land.

Glad you enjoyed it! Found the deep fryer on Amazon. It's made by T-Fal. Seems to work very well!

Somewhere between 375° to 350°. I always start off a little hotter to allow for the cold fish going in.

About 3/16" is what I was shooting for, even though there were a few a little thicker.

@@gregjohnson720 Hush Puppies Ingredients: 1 box of Jiffy corn muffin mix 2 eggs ¼ cup of all purpose flour 1 teaspoon of garlic powder 1 teaspoon of onion powder ¼ teaspoon of sea salt ¼ teaspoon of cayenne pepper About 3 tablepoons of chopped green onions Directions: Mix all ingredients, but don't over mix. Heat oil up to 350 degrees F, and take a couple of spoons and spoon a small amount into the hot oil. Repeat until all the batter is used. Cook until golden brown, and flip as needed

This not a method I am familiar with. I usually just cooked the fillets whole. Good way for the fish to go further and cook faster.

Sorry...can't stand catfish. That moldy taste just turns me totally off and I've never eaten catfish that didn't have it.

I've never experienced that taste at all with catfish. Very strange, but I have had catfish that wasn't trimmed well and the stomach liner taste really bad, but not the case at all with these. Very clean and delicious meat. Just curious why you even clicked on this video if you can't stand catfish?
