- 5 eggs 雞蛋
- 380g waxy potatoes 低澱粉薯仔
- 1 small yellow onion 洋蔥
- 1/3 cup of grated mozzarella cheese 水牛芝士
- ¼ cup chopped chives 細香蔥
- 1/3 cup of olive oil 初榨橄欖油
- 1 tsp of sea salt 海鹽
- ¼ tsp of ground black pepper 黑胡椒粉

Hi friends, Here are a few cooking tips for this recipe. 1) Use waxy potatoes because they could hold the shape better. 2) Use medium low heat to cook the potatoes for about 8 minutes. Onion should be soft and just start to caramelized. The sliced potatoes should be just cooked but still hold the shape. 3) Cover the potatoes and eggs mixture for 15 minutes, so the flavours would combine together. 4) Cook the omelette with low heat and keep checking the base to make sure it is brown not burn. You can cover it sometimes, but not too long. Don't let steam drip into the pan. 5) I use chives, you could use coriander or flat leaf parsley too. antichrist I love this recipe very much. haha I deliberately add half tea spoon each time. I feel it taste slightly better to do that. personal preference. 😊
