I absolutely love Thai food and chicken satay is definitely up there as one of my favourites. I've ditched the sticks and gone all out with this whole spatchcock chicken with peanut sauce. And you know what? It worked an absolute treat!

Looks fantastic. Quick question - where did you get the log you put the Chicken on at end? Perfect for putting a great hunk of meat on ready to carve up :-)

Hi, great cook, was going to cook this over charcoal on the Weber, what temp are you cooking at 200c For roughly 25 mins? Then turn Or do you have to go lower for direct? I normally cook indirect with a probe then go direct at the end. Thanks in advance.

Indirect then direct also works but I like cooking it bone side down for around 40 minutes then start flipping until its got a nice colour and hits 73c internal temp

Done this method today, not this recipe. It turned out brilliant, was a bit worried about burning the bird but it was moist and juicy. Had a probe at grate level 180c to monitor temp, (just had to shut down the Weber a couple of times to stop it running away) and a probe in the bird. Only thing was I probably sauced it a bit early could’ve waited another 10 mins (50 min mark) then sauced the bird. However will definitely use this method going forward. Cheers 👍
