I got Aaron and Madeleine to come visit me on Long Island. We spent a day wine tasting then went spearfishing with our friend Tristan. Next day I cook a black seabass whole wrapped in grape leaves.

Great video Will! Awesome having Aaron & Madeleine up there with you. When I saw the first first get shot, I’m not going to lie, my first thought was that was an amazing shot for you, but then I saw the head kill and thought, that’s more Aaron’s style. Lol. I was right. That fish looked absolutely juicy & delicious. Thanks for sharing!!! Always love seeing your mom.

I’ve been out of service area on a hunting a fishing trip for a month. Now that I’m back in the land of internet, I’m using my post-vacation “equiliabration” time to catch up on all of my favorite channels. I so enjoyed this video! The food looked amazing and I’m so glad to see PM and KWWM with you! So cool that you got them so come up to experience your “home” waters. Thanks to Tristen and his dad as well for setting this trip up. Without them, you couldn’t have shared with the rest of us! As always, I’m anxiously awaiting the next episode. Yea My husband and I fish a lot , we take out our flats boat about once or twice a month , working sucks . But yea , we live in central Florida and the mangrove snappers here are not as big as you guys get in the keys . Love learning your different cooking skills . Thanks for teaching me 😊

Will, I hope they left some of that bass for you once you finished filming! Looked fabulous, your cooking never ceases to amaze me. And to have A&M come with you back home, outstanding!!! I used to travel around the NE frequently, and was able to be invited to clam bakes, quahog’s (sp? Stuffed quahogs?) and the local lobster and NE clam chowder, it doesn’t get much better than that. Thanks for sharing!!!

You should make some Dolma with the grape leaves. My parents owned grape farm in Fresno California and i remember every time family came up they would pick grape leaves and jar them for dolma.

Why grape leaves? Do they add flavor? Or keep top moist? Always learn something here, and enjoy the company too. Cooking whole saves the time to fillet it, but you do have to scale it. I am lazy, so I like it cooked whole. Good job!

Both! A very subtle earthy flavor and helps keep the moisture in instead of evaporating. I love cooking a whole fish for the same reason!

It truly is an oasis outside of the city. We were in 30-60 feet and the temp was 73° top and 63° at the bottom

There was a time when you could catch a lot of Sea Bass here on the Central Florida Coast up here in Bayport.....They weren't as big but they tasted great.......The one thing I noticed was that the species didn't intermix with grouper.....If you wanted one species or the other you had to search for that particular species!!

@@CookingWithClams oh okay, i see. what about cooking fresh like the day of. I went on my kayak today and caught a nice trout and came back and cooked it. is that acceptable? I have had the black sea bass from the CT side, they are good fish. Sweet episode, i really enjoyed it.
