Korean Spicy Marinated Raw Crabs!! 양념 게장 (Yangnyeom Gejang)

**TIP: If you prefer a more saucy consistency or sauce is too dry you can add a touch of broth or water. I prefer the thicker sauce base. Enjoy!
INGREDIENTS:
1 lb blue crabs
5-6 tbsp soy sauce (you can add more as needed)
1/2cup to 3/4 cup Korean red pepper flakes (depending in taste)
2-3 tbsp corn syrup
2 tbs honey powder (or sugar) *if you like your food sweeter add more sugar or syrup.
2-3 tbsp garlic (more or less depending on your taste)
2-3 tbsp freshly grated ginger
2 stalks green onion
1 tsp sesame seeds
2 tbsp soju
1-2 tbsp sesame oil
touch of broth or water as needed *optional

Awww thank you, you are too sweet! There are other you tubers I’m sure who have posted their own recipe of this dish but a lot are in Korean so I try to make my videos English friendly. But I realized I mixed some Korean words in sometimes here and there sorry haha. I’ve gotten a lot of feedback from people who tried my recipe and like it. I hope you try it!!!

How do you eat?? I tried this once. The most delicious thing ever but i feel like I wasted the leg and claw meat. Only the center was easy to eat

Home Sweet You can I substitute soju to beer "malt beer" to be more precise coz I can't find any soju here in middle east alcohol is prohibited here.

Marianne Kristina Gumabon you can just leave out and if needed~ just add a touch more water or broth. The soju helps with potential crabby/fishy tastes but you can leave it out.

You can just leave out and add a touch more broth~ for raw shrimp I use the soy sauce marinade generally. I also have the soy sauce marinaded crab on my channel as well!

Hello. Can I substitute the gochugaru with gochujang instead? Would it be tasted so much different?

Yes it would be different. I guess you could but it wouldn’t taste the same, you would have to use different proportions and I would say cut some of the other ingredients down. Def not Apples to Apples those two haha.

Diana Adanan you can take it out completely if needed just add more water or broth. It just helps with the possible crabby/fishy. If you don’t have soju you can also use mirin. But not a problem if you want to take out. Hope that helps!

This recipe is meant to be raw but if you’re don’t want it raw then I would cook it first then put sauce or put sauce as your are cooking. Or even deep fry if you want then sauce.

May I ask what the different between corn syrup and rice syrup..???

Per google as they explain way better than me haha Corn syrup is mostly fructose if you;'re getting it from megamarts. Unless you get the dark corn syrup that hasn't been converted, then it will be mostly maltose and complex saccharides. Rice syrup isn't spiked with vanilla and is mostly maltose. Clear mulyeot is made from corn, and brown mulyeot, called rice syrup, or ssal-jocheong is made from rice. They are pretty much interchangeable in Korean cooking but corn syrup is thinner and the color is clear.

I want to try make this but since we don't have live fresh crabs here, can I make it using already frozen packaged crabs? And any brand is fine or do I need to buy the frozen crab brand that's made in Korea? Thanks

Yes most is frozen once anyway. Most humane way to kill fresh crabs is to freeze for few hours. No specific brand it’s all different per market~ you just want to check when it was frozen/packaged and it doesn’t come out right when you use live and just cut them up. Freeze first if you have live, but when you have live you know they were fresh before freezing/packaging if that makes sense haha.

Thank you! I have been wanting to make them with the frozen packaged crabs for awhile now, but I only see recipes with the fresh live crabs so wasn't sure how safe it is to eat. Thanks for the assurance.

@@212hi the point is that It was alive before frozen not dead then frozen, I mean I guess that’s the hard part to determine if they were indeed fresh crabs. And thaw them out in fridge so they don’t go bad or have a fishy smell before you make it. I usually freeze myself from live so I know they were fresh or I get them from my local poke store all prepped already. Also make sure raw crab in your area is safe to eat, some areas it’s not I hear.

Great site! I'm glad to have found it. One point - it would be easier for a viewer if you used the same term in your video as in your text. I too didn't know what that first ingredient was until I read the question below and saw your answer. Likewise maybe explain ingredients that a non-Korean might not know like soju so we can look for substitutes.

No you can eat same day or next day! Just leave in fridge for sauce to sit for an hour or so before to get max flavor. Don’t leave too long to eat, it is raw so it doesn’t last too long.

Mary Do this recipe you can eat it right away but I put in fridge for hour or two at least before or next day. You should not keep for more than a few days to a week as it’s raw and not marinated in a brine or anything. Better to eat sooner.

When you say other shell fish. Do you mean like raw clams and mussels?

Any kind of shellfish like shrimp, crab, oysters etc. just gotta make sure your area it’s safe to consume raw shellfish~

Taylor Birmingham you can eat right away. Over night in fridge is better! Should eat within couple days as it’s raw and not salted like the soy sauce version!

Hi yes you can use soft shell! Soft shell crabs, or “softies” are blue crabs that have recently molted their shell. They are harvested before they can regrow a new shell, so their skin is soft. So either is fine! Hope that helps

sarahbesLeepy yes Soju or other alcohols are used a lot in small portions to help with any smell from meats and seafood in this case. Or just drink it hAhaha

It’s eaten raw. You can use gloves to squeeze it out or use your mouth to bite into it and suck out the crab~
