I have not made nor eaten moi moi in years. The best moi moi I've had was while visiting Lagos, Nigeria. It was wrapped in banana leaves. I steamed mine in aluminum foil, but have used little aluminum tins with matching lids, as well. The tins were given to me while in Nigeria. Watching your video has inspired me to make some.

Oh mine! You take me back home. I left Nigeria 36 yrs ago, as a teenager and have not seen the leaf vision of moi moi being made, as we did back then, till now. The smokiness comes to mind and I have not had that since I left home. I am watching your video, while just up and you have made my day. I will go to the Asian farmer's market by me and see if they have the leaves to make this version for my kids, when they come home from college. Thank you Habibah! Love all the goodness you and your family put out there. Did not kno you had a Nigerian background until your video of visiting your childhood friend😄 Amazing how I have been loving your videos regardless, but then found out just recently, about your background and it was a lovely surprise. Your beautiful family just oozes goodness and this is very refreshing. Thanks again for this and all your precious videos and looking forward to more to come.

Moi Moi makes me hungry for Jamaican Blue Draws, AKA duckunu. It is made with cornmeal, coconut milk, spices, raisins etc. wrapped in green banana leaf and cooked. Delish!

To save 99% of the labour, put the whole beans in the blender, then put enough water to cover, next, Pulse 2 or 3 bursts, you'll notice the skins will all separate from the bean cotyledons. Then rinse out the skins. You will see there is absolutely no rubbing necessary. The pulsing in the blender, takes care of all that. Re the wrapping: always briely place the banana leaves over open flames for 1-2 seconds, this makes them pliable. And easy to work with. They don't split once they have been 'flamed' If you're washing the beans by hand, don't soak the beans, The less the contact time with water, before you commence with the washing, the easier it is to peel. Its counter intuitive, but once the cotyledons absorb water and swell up, the harder it is to peel the skin off them. Just wet the beans and start rubbing between both palms. Don't soak.

I like this suggestion! Pulse first then separate! No soaking! Is there another bean that can work?

Moi Moi YES!! Don't forget to blend the beans not only with red pepper but with a Habanero or Scotch Bonnet pepper! Tip: If you don't like it too hot just remove the seeds before blending and you will still get the authentic flavor. Enjoy

Yummy, I love moi moi and your video made it so easy. Though I don't LOVE to cook like you, I'll try this recipe soon! We use mini cake pans but I too prefer with banana leaves.

This is a really great video. I've never known how to make Alala with banana leaves until I saw this, it's much easier than I thought. I also didn't know you can use foil paper. I agree the banana leaves makes it seem much more organic and I love the flavour too but we never cook it like this in Kano, we just use small tins or plastic bags and never put fish. And we cover in Palm oil and chilli flakes. My mum calls kosai bean cakes. I've never made alala because I'm wayyyy to lazy to remove the skin from the beans, so I just buy it or get someone else to make it hahaha!! Thankyou so much for sharing and I do look forward to tasting your cooking one day it sure looks amazing and has got me salivating like a hyena!!!!!😋👌🏾💕

We hve something similar. But we use cassava grated , grated banana and sago. Im frm Papua New Guinea

I was born in Aruba. and we used our own black eye beans to make one on one. 1 night water cats soak the beans and the day after that we take the skin off presues so you can do that diet but we don't make it so watery but less so that the texture is thicker with spicy madam janet nice and hot. with some salt in nothing more. because the beans have so good taste. then we use 2 spoon and make the shape of an egg and fry in hot oil. yummy . But I have lived in the Netherlands since I was 17 years old and go to Aruba because I and my husband are cutting holidays to see other countries. my favorite is israel because my front parents are jewish. thanks for the recipe I'm going to make that 👍🏼 and God bless you and family. 👍🏼👋🏼🙏🏼

It is traditionally done with banna leaves and another kind of leave,that I don't know the name. Nutritionally better than tins,plastic etc. Moi moi is authentically a Nigerian dish.

You are welcome! I try to be careful while holding or cutting the leaves to prevent tearing but unfortunately some will tear so I may double or layer the leaves before folding.

Heat d leaves directly on d gas. It softens it and makes it easy to fold. The one she use has already gone through that process. No plantain leaves wont break if handled that way without softening

Traditionally, a stone mill will be used. Nowadays, we either blend at the market in an industrial mill or at home in a blender.

About 45mins. Make sure you add a little more water midway so bottom of pot doesn't burn and it steams well.
