I think a lot of people would like to see a video describing how you came to be a sushi chef. There seem to be a lot of ways to do it, from years-long apprenticships in Japan, to a school in Southern California that will teach you the basics anyway in something like 3 months. I think we'd find your story really interesting. Me, I'm old and I'd not want to work as hard as a sushi chef does, but we're all curious.

You should catch them in July when they've fatten up from all the anchovies. You wouldn't believe how fatty and dense the meat can get. Unfortunately, its a miss or hit and not all of them may have that quality. Also, try aging the meat in the refrigerator for a day or two and it gets even better. Good work!

I'm here for the comments on stripe bass sashimi. I tried it before and did not like the firmness of the meat but I have not tried it with Shiso or lemon either. I've stayed in Japan for 15 years and salmon is one of my favorites. Like your wife, I prefer salmon raw and am not a fan of it cooked. I will try striped bass again but this time slice it thinly and with shiso or lemon. Good vlog, keep it coming.

Great video and experience thanks for sharing im also a sushi chef going for 4 yearns now still learning, i love going fishing and hooking up some perch and sometimes the Striper Bass. Ill try it in sashimi next time. Ive seen the parasites sometimes thats why i havent tried sashimi. Make some nigiri next time 👍🏻

Nothing against raw... But watch out for em worms in the meat. The first perch is a red tail.. That is good eating too. The other perch, barred perch, is good eating too from all the perch family in our coast lines. Aside from all that, fun times. Great rose sashimi presentation.!
