Growing up in early 70's we visited several relatives that were always growing bitter melon (fung gua) in their backyards. I was sent to play while the elders were talking and eating cakes and drinking coffee or Wu Lung Cha. Wonderful times!

I got turned on to bitter melon at an early age working at my buddy's Chinese restaurant. Eventually I learned cooking as a passion/art. Great stuff, I have substituted white sugar with maple syrup(Vermont) and New Zealand honey. I would suggest chopping a quarter cup of green scallions and one egg for binding. 1/8 cup of corn starch will also keep all the ingredients together. Instead of black pepper I use Szechuan black pepper corns(crushed). Also, one clove of garlic chopped really brings out the flavor of the finished stuffed bitter melon. My better half is Jewish and I have turned her on to this unique and very flavorful dish - it is one of her favorites now !!

I like this version of cooking bitter melon ring stuffed with pork and shrimp. Traditionally we stir-fry this with beef in black bean sauce which is simpler to do... A very basic home cooking dish. As in coffee, the bitterness is an acquired taste, so drinking black coffee and eating bitter melon is not for everyone, though boiling it briefly may remove some of the bitter.

This has been one of my favorite dishes when my wife and I usd to go to Cantonese restaurants. Unfortunately, just like the "Salted Black Beans," attempting to purchase Bitter Melon in an ordinary grocery is an act of futility. I can just envision the produce man's response when I would ask for "Bitter Melon:" "We don't sell no Bitter Melons here." "All our melons are Real Sweet!" I'll just have to wait until I go to an Asian Market in the big city. :-(
