高筋麵粉 210克
黑麥芽粉 3克
糖 5克
黑糖 20克
即溶酵母 3克
鹽 4克
牛奶 60-70克
飲用水 70克
全蛋液 25克
無鹽牛油 20克
提子乾 50克
*預熱
*烘烤190度 15-18分鐘
備註:
1. 冬天天氣(低於15度)宜用暖水. 夏天天氣(高於30度)宜用冰水.
2. 每個焗爐/烤箱有自己的個性, 可按其個性調節溫度和時間.
Hong Kong Style Dark Malt Bread (2pc)
Bread flour 210g
Dark malt powder 3g
Sugar 5g
Dark brown sugar 20g
Instant yeast 3g
Salt 4g
Milk 60-70g
Drinkng water 70g
Egg liquid 25g
Unsalted butter 20g
Raisins 50g
*Preheat
*Bake 190C 15-18min
Remarks:
1. Use luke warm liquid if weather is cold (lower than 15C). Use icy liquid if weather is hot (higher than 30C).
2. Individual oven might have different characteristics, adjust baking temperature and time accordingly.

I can't get Dark Malt powder, any replacement ? Can I replace it with Molasses ? That's what the store has. Thanks

Hi thanks for the message. I am afraid the malt powder can’t be replaced by the molasses. You might like to skip the malt powder and replace it with whole wheat or even rye for a trial. Can add up to 5-8g
