Recipe
Bread flour 300g
Sugar 30-35g
Instant yeast 3g
Salt 3g
Japanese 3.6 milk / Milf of your choice 220g
Unsalted butter 30g
*Preheat
*Bake 200C(upper heat) 15min + 170C(upper heat) 200C (lower heat) 15min
Remarks:
1. Use luke warm liquid if weather is cold (lower than 15C). Use icy liquid if weather is hot (higher than 30C).
2. Individual oven might have different characteristics, adjust baking temperature and time accordingly.
高筋麵粉 300克
糖 30-35克
即溶酵母 3克
鹽 3克
日本3.6牛奶 / 自選牛奶 220克
無鹽牛油 30克
*預熱
*烘烤 200度(上火和下火) 15分鐘 + 170度(上火) 200度(下火) 15分鐘
備註:
1. 冬天天氣(低於15度)宜用暖水. 夏天天氣(高於30度)宜用冰水.
2. 每個焗爐/烤箱有自己的個性, 可按其個性調節溫度和時間.

Hi Mrs Harry 昨天試整了,外型好靚但沒有拉絲效果,呢隻是否唔同生吐司食譜?還是bread flour 落太多?多謝指教🙏🙏

你好👋🏻拉絲效果主要來自水份和筋性。所以麵粉和水的比例很重要。不同牌子的吸水量也不同,我會比較在意薄膜的質素,和發酵的狀況。供參考。加油💪🏻

Hi Mrs Harry. I guess you use Panasonic oven too? Did you use the fermentation function in this video?

Hihi I found it better using the method in the video rather than the preset fermentation mode. It’s just my personal experience. How about you?

Why you spray water on the dough before the second proofing?

Hi To avoid dry out. But it really depends on the humidity level in the air. Spraying a little is often safer for my case. Hope it helps. 🧡

是可以的 中種法目的是混入已發酵熟成的小麵糰 增加柔軟度和香 以我有限的知識理解,高筋和中筋最大的分別是蛋白質,產出的麵筋靭度會有差別,所以軟度跟高度因而變不一樣。

唔好唔開心啦! 好多原因㗎! 如果發到有酒味就唔好要喇! 哈利太太都失敗過好多次。就算今次成功,下次又會遇到新問題。發酵溫度時間、酵母當日生唔生性、筋性足唔足、又無正碓判斷筋性狀態⋯哈利太太實踐時都經常碰壁,嚇到自己死死下。冷靜落嚟,又發現自己又學到野。心情好返,想整就整多次,唔想整就唔好逼自己,開心緊要啲!💕
