Delicious pork belly, with an extra crispy crust and tender and tasty meat.
Ingredients for this fantastic recipe:
- Pork belly (between 2 and 3 kg)
- Coarse baking salt (enough to cover all the skin)
- Olive oil, a drizzle
- Brandy or white wine, a splash
- Normal fine salt, a teaspoon
- Black pepper, a teaspoon
- Sweet paprika or Paprica, 2 teaspoons
- Hot paprika, optional, half a teaspoon
- Turmeric, 2 teaspoons
- White wine vinegar (can be substituted for another type of vinegar)
Baking times:
- 90 minutes at 160 degrees Celsius with heat above and below, in the oven that has coarse salt on the skin
- 90 minutes at 180 degrees Celsius with heat up and down in the last bake.
Make sure that the skin does not burn during this last baking. If we see that it is roasting too much, remove it from the oven.
