Ingredients

800g chicken
1/2 cup sesame oil
3 cups Shaoxing Huatiao Cooking Wine or Glutinous Rice Wine
3-4 thumb size ginger
2 red dates - deseeded
20g wolfberries
2 pieces of dang gui
10 pieces of black fungus
Sugar & salt to taste

Hi Roland and Jamie, finally get to try this dish. Not sure if is the wine or was me, slept so well Lollll. I hope one day u will show us how to cook the stir fry egg white raw -egg yolk at the centre with broccoli (like the one in crystal jade la mian) without deep frying.😊

Hello Roland can I use rice wine instead of Shaoxing wine to cook this dish??

Its amazing idea that you heat the wine in a separate pot before being added to the chicken. I never thought of that. Indeed glutinous rice wine is kinda hard to find in Singapore. I have seen a few China supermarkets in Chinatown selling them. I smuggle them from Malaysia whenever I have a chance

You can get 黄酒 from Yue Hwa. I got mine there.

We love to shop and we love to shop at HDB shops wahahaha. Auntie and Uncle’s hangout. Just keep looking for it until you find a shop that carries a heavy one. It’s pretty much like hunting and we love it. 🤓🤓 unfortunately as we bought ours 10 years ago, we can’t remember which shop we bought it from.

Go to AMK Central, beside the hawker centre is a single storey shop. Sells a lot of housewares, including old style woks. Remember to season the wok before 1st time cooking.

+Helen Tan Hihi Helen. Thanks for dropping by our channel. Here's what I copied from Wikipedia:) Huadiao jiu (花雕酒; pinyin: huādiāo jiǔ; lit. "flowery carving wine"), also known as nu'er hong (女儿红; pinyin: nǚ'ér hóng, lit. "daughter red"): a variety of huangjiu that originates from Shaoxing, in the eastern coastal province of Zhejiang. It is made of glutinous rice and wheat. Shaoxing wine (绍兴酒 or 紹興酒; pinyin: Shàoxīng jiǔ) is the more internationally known high grade version. It is commonly used in Chinese cooking as well as for drinking. The reddish color of these wines is imparted by red yeast rice. Hope this helps.
