In this video I’m going to show you how to make Almond Biscotti Crisp. You only need 4 ingredients to make this super crispy & tasty snack! 一起来做杏仁脆饼! 只需要4种食材就可以做出这道超级香脆可口的小点心!
Ingredients:
• 300g (2 cups) raw almond; or toasted at 300°F (150°C) for 15 minutes… If you toast the almond prior, you’ll get a more toasted nut taste.
• 6 egg whites (or 4 whole eggs)
• 190g (about 1 cup) sugar
• 300g (about 2 cups + 1 tbsp) self-rising flour (You can also use all-purpose flour. If you do, add 1-1/2 tsp of baking powder)
原料:
• 300 克(2 杯)生杏仁; 或 放入烤箱300°F (150°C) 烘烤 15 分钟… 如果你先烤了杏仁,你脆饼会有更多的烤坚果味。
• 6 个蛋清(或 4 个全蛋)
• 190 克(约 1 杯)糖
• 300 克(约 2 杯 + 1 汤匙)自发面粉(你也可以使用通用面粉。用通用面粉的话,加 1-1/2 茶匙发酵粉)
Loaf pan (面包盘): 8”x4”
First bake: 350°F (175°C) for 35 minutes
Second bake on the next day: 250°F (120°C) for about 40 minutes

Thanks for the recipe! If whole eggs are used, do you need to beat them to the ribbon stage?

Wow! Perfect use of all the leftover egg whites from making pineapple tarts. Is there a difference in using whole eggs vs purely egg whites?

To me there's no significant differences in taste/texture. The one using whole eggs will just have more yellowish brown color 😀

Please advise if 2nd baked, is not crunchy

It's most likely that the cookies were not baked for long enough second time around or the oven temperature is not high enough. Every oven is different. So, try increase 50F next time or bake them longer. Just keep an eye on them to make sure they don't get burned.

Yes you certainly can! I've tried it with 1/2 cup of sugar before and it turned out just the same ☺
