This is my very first video of 2022 and I wanted it to be a sure winner.
This Sweet Potato Cobbler recipe has been in my laboratory for weeks now. I finally came up with something that I can say that I’m proud of. I wanted to take all of the fuss out of the preparation and make it still taste great. Now as I mentioned in the video, my Stepdad Tom was the first person that introduced me to this cobbler, well in a way. I remember him asking about this Sweet Potato Cobbler every holiday season. We’d never heard of it so we never paid him any attention. Now I can understand why he was always asking for it.
A coworker used to make this special treat for us too but I can’t remember if it was Donna Tate or Janet Coggins. I’m leaning towards Donna but I’m still not sure but it was delicious too.
The person who made it best was my oldest Sister Cheryl. Well now I don’t have to bother her anymore because mine is a close runner up to her masterpiece. Now y’all know me and I don’t have a problem giving credit where it’s due.
I hope y’all will give this recipe a try and I hope that you’ll love it just as much as I do.
Sweet Potato Cobbler:
3 Large Sweet Potatoes, peeled, sliced thin and washed
1 1/2 Cups White Sugar
1/4 Cup Brown Sugar
2 Tablespoons Brown Sugar
1 Teaspoon Cinnamon
1/2 Teaspoon Nutmeg
2 Teaspoons Vanilla Extract
1 Stick Butter, sliced up
1/2 Cup Butter Melted
2 Tablespoons Butter Melted
2 Frozen Deep Dish Pie Crusts, room temperature
First using a medium size cast iron skillet pour the 1/2 cup of melted butter. Sprinkle 2 Tablespoons of brown sugar on top of the butter. Remove 1 of the pie shells from the aluminum pan and place it on top of the melted butter and brown sugar.
Next layer the sweet potatoes on top of the pie crust. Then add the white sugar over the sweet potatoes. Place the cut up butter on top of the sugar and sprinkle with the cinnamon and nutmeg. Then sprinkle the brown sugar on top. Add the vanilla next.
Remove the next pie crust from the aluminum pan and place it on top of the filling. Brush with the remaining melted butter and sprinkle with cinnamon and sugar.
Bake for 1 hour at 400 degrees checking after the first 45 minutes for doneness. Serve warm or cold. Enjoy!
