Although mochi is a Japanese term, pastries made of glutinous rice is popular and widespread throughout east Asian. But in general terms, mochi type pastries are stretchy and chewy (in a good way) in texture. Hotteok (호떡) is a Korean yeast leavened pancake, traditionally filled with a brown sugar cinnamon.
