TWICE. You got us twice! "Now that looks like an alarming amount of white sugar, *but don't worry, we're also adding brown sugar* " "I realize that's a lot of oil, *but we're going to be balancing it out with some butter* "

I literally laughed out loud when talking about the sugar he said "that's a terrifyingly large amount, but don't worry... we're also adding brown sugar." BAHAH AND THEN! he went on with the oil and butter.. YOU ARE SO FUNNY Chef John. I love watching you cook. :)

My wife made these today, and they are great. Very moist and not too sweet. She used all butter, and that worked out just fine.

just got these out of the oven! didn't have the budget for that much pecans so on top of a little bit of pecans I added a handful of cranberries and some orange zest. really lovely!

I just made these. They came out awesome. I ended up with about 26 cupcakes even though I filled them pretty high. I added a handful of dried cranberries to the mix. It gives it an unexpected zing. Great job, Chef!

i have been watching your videos for several years... you are one of the most inspirational people on youtube for America and the whole world really (i am from Saudi Arabia )... you love what you do and kinda force people to like it as well... if there were an Oscar for youtube, you would certainly be nominated for it!

These were so good!! I also gave some to my grandma and grandpa and they asked for the recipe, it took me a few minutes but I translated everything to Dutch and in grams😂 I also toasted the chopped pecans for an extra amazing flavor. Definitely a keeper!! I did reduce the sugar a bit though😅 I used 75 grams of brown sugar instead of 110 or something and about 5 tablespoons less of the normal sugar. I think if I added the full quantities it would be a bit to sweet

Just finished making these! They turned out super! Thank you, Chef John! I was chuckling when I added the sugar and the oil+butter. I filled out my muffin tray like you did and the batter yielded me 23 muffins 😋yum yum, I love recipes that have a big yield for one batch because that means I can share and still have lots left for myself!

Evening Chef John! My wife brought home two beautiful large sweet potatoes from the store today, so naturally I stole them from whatever recipe she had planned, and decided to make these muffins with help from the kids. The only ingredient we didn't have were the pecans but it didn't matter because HOLY COW these were AMAZING! They're my new favorite muffin and my kids gobbled them down too! Thank you SO much for posting this recipe!

Thanks Chef John, I just made these with some adjustments and it turned out great and super moist, for anyone looking for a lower calorie version: replace the butter with full fat yogurt, but keep the oil, and replace the white sugar for stevia but keep the brown sugar.

OK so this recipe is delicious, p as we’ve come to expect from every CJ recipe. I do a thing with mine that doesn’t change the recipe, but takes the flavor profile to the next level. What I do is this: when the muffins are fully cool, take as many muffins out of the batch as you intend to eat right away. Put those in a tin or on a sheet pan with no paper and put them in the oven at 425 for about 5 minutes. You will get a carmelized, chewy in a good way, amazingly complex set of additional flavors. Because after all, you are the Juliard faction of your Maillard reaction.
