Sweet Sour Pineapple Chicken

This was a delicious dish! Mom loved it, but said she felt the chicken was a little "dry." So next time I will use thighs and see what she thinks. Yum!!
1 pound of boneless and skinless chicken thighs or breasts, cut into 1" chunks
1 egg white
1/2 teaspoon kosher salt (1/4 teaspoon table salt)
2 teaspoons cornstarch
1 10-ounce can pineapple chunks (reserve juice)
1/4 cup juice from the canned pineapple
1/4 cup white vinegar
1/4 cup ketchup
1/2 teaspoon kosher salt (1/4 teaspoon table salt)
2-3 tablespoons brown sugar
1 tablespoon + 1 teaspoon cooking oil
1 red bell pepper, cut into 1 inch chunks
1 yellow bell pepper, cut into 1 inch chunks
1 teaspoon grated fresh ginger
In a bowl, combine the chicken with the egg white, salt and cornstarch. Stir to coat the chicken evenly. Let sit for 15 minutes at room temperature or up to overnight in the refrigerator.
In the meantime, whisk together the pineapple juice, vinegar, ketchup, salt, and brown sugar.
Heat a large frying pan or wok over high heat until a bead of water instantly sizzles and evaporates. Pour in the 1 tablespoon of cooking oil and swirl to coat. It's important that the pan is very hot. Add the chicken and spread the chicken out in one layer. Let the chicken fry, untouched for 1 minute, until the bottoms are browned. Flip and fry the other side the same for 1 minute. The chicken should still be pinkish in the middle. Dish out the chicken onto a clean plate, leaving as much oil in the pan as possible.
Turn the heat to medium and add the remaining 1 teaspoon of cooking oil. Let the oil heat up and then add the bell pepper chunks and ginger. Fry for 1 minute. Add the pineapple chunks and the sweet and sour sauce. Turn the heat to high and when the sauce is simmering, add the chicken pieces back in. Let simmer for 1-2 minutes, until the chicken is cooked through. Timing depends on how thick you've cut your chicken. The best way to tell if the chicken is done is to take a piece out and cut into it. If it's pink, add another minute to the cooking.

Beth, we had your Sweet and Sour Pineapple Chicken last night, and it was delicious, served with jasmine rice. I was so excited to eat my dinner that I forgot to take a picture. It was easy to make and I had everything in our pantry except the tin of pineapple. Now that we know we're gonna like it, I will always have the pineapple waiting. Oh, we used rice vinegar instead of white vinegar and threw in a pinch of red pepper flakes. Very good! Pat enjoyed as much as I did, but suggested that next time, he won't put in the whole tin of pineapple - our tin was the equivalent of 14 ozs. Thanks.

This was pretty quick and easy and tasted divine. I used chicken thighs and a dash of salt on the veggies. I did add a little cornstarch slurry towards the end just to make the sauce thicker and help it "stick" to the other stuff. It was Onolicious!

Hi Ang :) They are both doing well. Scott's voice is coming back slowly but surely. He's getting stronger. He got one of his knees drained and injected and he can now move it without pain. He is hoping to get the other knee injected and drained tomorrow so he will be able to transfer to his wheelchair without much pain. So all is going well. I even started filming videos again :)

We have similar dish here in Thailand, but we also add cucumbers, and for the meat , we sometimes replace the chicken with shrimp or squad. :)

I *like* the simplicity. Some sweet / sour chicken recipes can get entirely too complicated, for no special reason. The result looks yummy! Did you have to do any thickening of the sauce, or did it thicken up naturally? Got a new Chef's knife over the weekend, and I'm totally in awe of it. I'm curious if it's like any of the ones you were looking at in Paris. I did a show and tell in the first part of my latest video.

I will watch the video in the morning. Can't wait to see it. It thickened up on its own, I'm sure because of the cornstarch. Mom liked it so much she has requested it for her birthday dinner next Monday, but using chicken thighs. I liked it too, such s/s chicken it is!

As you probably remember, I am not a fan of sweet flavours with dinner. BUT, I said to Pat: "do you suppose we could try this. It appeals to me." He doesn't like pineapple, and I expected him to scrunch his nose, but he didn't. He agreed that it would be good. And, one last thing. As you put the chicken into the bowl with the egg white stuff he said to you: "Get rid of that white stringy tough thing on the chicken" and one second after, you removed it. Like a little miracle. - roc
